Al colore è giallo paglierino con riflessi verdolini da giovane, e vira verso il dorato con l'affinamento; limpido e brillante. Al naso è intenso e abbastanza complesso: agrumi — pompelmo, limone — pietra focaia ed erbe mediterranee, con un costante richiamo salmastro. In bocca è secco e fresco, con un'acidità tesa e affilata; decisamente sapido, di corpo e caldo, dal finale persistente su ritorni minerali e agrumati. È un bianco che rinfresca e fa riflettere allo stesso tempo.In colour it is straw yellow with greenish reflections when young, moving towards gold with ageing; clear and bright. On the nose it is intense and fairly complex: citrus — grapefruit, lemon — flint and Mediterranean herbs, with a constant saline hint. On the palate it is dry and fresh, with taut, razor-sharp acidity; markedly savoury, full-bodied and warm, with a persistent finish of mineral and citrus echoes. It is a white that refreshes and makes you think at the same time.

Santorini è ciò che resta di un'eruzione: un arco di roccia affacciato sulla caldera, nel cuore delle Cicladi. Qui la vite cresce su pomice, cenere e lapilli, un suolo povero e privo di argilla in cui la fillossera non ha mai attecchito — per questo le viti sono ancora a piede franco, non innestate, e molte hanno decenni di vita. È un paesaggio estremo: poca pioggia, sole feroce e il vento dell'Egeo che non dà tregua. La risposta dei vignaioli è il «kouloura», un allevamento a canestro: i tralci vengono intrecciati in una corona bassa che raccoglie l'umidità della rugiada notturna e ripara i grappoli dalle raffiche e dalla calura. In questo ambiente l'Assyrtiko dà il meglio di sé: matura sotto un sole che farebbe perdere acidità a quasi ogni altra uva, e invece conserva una spina dorsale tesa e affilata. Accanto al Santorini secco vivono il Nykteri, affinato in legno, e il Vinsanto, dolce e ossidativo, da uve appassite al sole.Santorini is what an eruption left behind: an arc of rock looking over the caldera, in the heart of the Cyclades. Here the vine grows on pumice, ash and lapilli, a poor, clay-free soil where phylloxera never took hold — which is why the vines are still ungrafted, on their own roots, many of them decades old. It is an extreme landscape: little rain, fierce sun and the relentless Aegean wind. The growers' answer is the “kouloura”, a basket training: the canes are woven into a low crown that gathers the moisture of the night dew and shields the bunches from the gusts and the heat. In this setting Assyrtiko is at its best: it ripens under a sun that would strip the acidity from almost any other grape, yet it keeps a taut, razor-sharp backbone. Alongside the dry Santorini live Nykteri, aged in wood, and Vinsanto, sweet and oxidative, from sun-dried grapes.

It is the starting point for anyone who wants to understand Greek wine: not just any white to sip absent-mindedly, but an experience to seek out at least once, and then to chase.
