Here the vine grows on soils of ash, pumice and lava — poor, free-draining and clay-free — where phylloxera cannot survive: many plants are still on their own roots, ungrafted. To shield the bunches from the wind and the fierce sun, growers train the vine as a kouloura, a basket woven low to the ground. From its island Assyrtiko has spread to mainland Greece — Macedonia, Halkidiki, Drama — and, in recent years, as far as Australia's Clare Valley.

The arid, windy climate and the poor, free-draining volcanic soil force the vine to very low yields and slow ripening: the grape builds sugar and alcohol without losing its cutting acidity. The result is a dry white of great backbone and long life, where the savoury tang is not salt carried in from the sea but a taste sensation that lengthens the finish. The Santorini PDO rules call for at least 85% Assyrtiko.
