Il Metodo Classico — detto anche Méthode Champenoise fuori dalla Champagne — prevede una seconda fermentazione direttamente in bottiglia: al vino base viene aggiunto uno sciroppo di zucchero e lieviti selezionati che producono anidride carbonica naturale, poi le bottiglie riposano orizzontali per mesi o anni a contatto con i propri lieviti esausti. È proprio questo riposo prolungato — detto affinamento sui lieviti — a plasmare le note di crosta di pane, pasta fresca e nocciola tostata che si ritrovano, con sfumature diverse, in tutti e tre i grandi Metodo Classico italiani. La prima denominazione italiana dedicata esclusivamente allo spumante metodo classico nasce in Trentino, tra le Alpi e le valli del fiume Adige: è il Trentodoc, denominazione che porta con sé una storia lunga oltre un secolo, iniziata con Giulio Ferrari che all'inizio del Novecento portò in Trentino l'idea di una grande bollicina italiana. I vitigni ammessi sono Chardonnay, Pinot nero, Pinot bianco e Meunier, tutti da uve trentine. Il disciplinare prevede un affinamento minimo di 15 mesi sui lieviti — 24 per i millesimati, 36 per le riserve. Nelle Langhe il pensiero corre al Barolo e al Barbaresco, ma da queste stesse colline emerge una bollicina di grande personalità: l'Alta Langa DOCG, spumante Metodo Classico prodotto in Piemonte con Pinot nero e/o Chardonnay — dal 90 al 100% — con la possibilità di aggiungere fino al 10% di altri vitigni idonei alla coltivazione regionale. È la denominazione che richiede più pazienza: l'affinamento sui lieviti è fissato a un minimo di 30 mesi, 36 per le riserve. Il territorio di alta collina, con le sue escursioni termiche tra estate e autunno, regala alle uve una maturazione lenta: al naso l'Alta Langa è fine, con aromi fruttati delicati, sentori fragranti di lievito e crosta di pane; in bocca è fresca, abbastanza sapida, con un'eleganza verticale che distingue questa denominazione dalle altre due.
