Negli anni Ottanta il Timorasso era quasi sparito dalle colline di Tortona: produceva poco, marciva facilmente, e i vignaioli avevano piantato altro. Oggi è il vino su cui i Colli Tortonesi hanno costruito la loro riconoscibilità, un bianco teso e sapido di lunga persistenza, e in etichetta porta spesso il nome latino della sua città: Derthona.In the Eighties Timorasso had all but vanished from the hills around Tortona: it cropped poorly, it rotted easily, and growers had planted other things. Today it is the wine the Colli Tortonesi have built their name on, a taut, savoury white with a long finish, and its label often carries the Latin name of its town: Derthona.

La storia nel bicchiereThe story in the glass

I Colli Tortonesi stanno nell'angolo sud-orientale del Piemonte, dove la regione tocca Liguria, Lombardia ed Emilia, e si allargano sulle valli del Curone, del Grue, dell'Ossona, del Borbera e della Scrivia, lungo una fascia collinare larga circa venticinque chilometri. Il disciplinare descrive terreni sedimentari del Bacino Terziario Piemontese, con pendenze fra i 15 e i 30 gradi ed esposizione prevalente da sud-ovest a nord-est, e attribuisce ai suoli argillosi e marnosi la sapidità che accomuna i vini della zona; attorno a Sarezzano e Sant'Agata Fossili si lavora sulle marne che portano il nome del paese. Il Timorasso, qui, c'era da sempre: lo nomina il trattato di agricoltura di Pietro de' Crescenzi nel Trecento e ne dà una descrizione precisa Giuseppe di Rovasenda a fine Ottocento. Poi arrivarono la fillossera e le guerre, e i reimpianti andarono verso uve più docili: il Timorasso produce in modo incostante ed è sensibile ai marciumi, mentre il Cortese rendeva di più e dava meno pensieri. Negli anni Ottanta ne restava pochissimo: la stessa sorte di molti altri vitigni autoctoni italiani dimenticati e poi tornati nel calice. A rimetterlo in campo fu Walter Massa, vignaiolo a Monleale: la sua prima vinificazione, nel 1987, fece seicento bottiglie. Si unirono Andrea Mutti e Paolo Poggio, negli anni Duemila arrivarono gli altri, e il nome Derthona — come i Romani chiamavano Tortona — cominciò a circolare. I numeri dicono il resto: dai 3 ettari del 2000 ai 440 di oggi, con i soci del Consorzio passati da 35 nel 2015 a 114 nel 2024. In etichetta, però, la denominazione resta Colli Tortonesi Timorasso: Derthona non è ancora nel disciplinare vigente, che conosce solo le sottozone Monleale e Terre di Libarna. La domanda di modifica è del 2020 e il testo proposto, pubblicato dalla Regione Piemonte nell'ottobre 2024, aggiungerebbe una terza sottozona su tre livelli — Piccolo Derthona, Derthona e Derthona Riserva — tutti da Timorasso in purezza. In cantina la strada più battuta è l'acciaio, con mesi sulle fecce fini rimescolate periodicamente; qualcuno preferisce il cemento. Il disciplinare chiede dieci mesi di invecchiamento dal 1° novembre della vendemmia, ventuno per la Riserva. È tempo che serve: da giovane il Timorasso resta chiuso, e si apre davvero dopo tre o quattro anni.The Colli Tortonesi lie in the south-eastern corner of Piedmont, where the region meets Liguria, Lombardy and Emilia, spreading across the Curone, Grue, Ossona, Borbera and Scrivia valleys, along a hill belt some twenty-five kilometres wide. The production rules describe sedimentary soils of the Piedmont Tertiary Basin, with slopes between 15 and 30 degrees and a prevailing south-west to north-east aspect, and credit the clay and marl soils with the savouriness the wines of the area share; around Sarezzano and Sant'Agata Fossili growers work the marls that carry the village's name. Timorasso had always been here: it is named in Pietro de' Crescenzi's fourteenth-century treatise on agriculture and described in detail by Giuseppe di Rovasenda at the end of the nineteenth. Then came phylloxera and the wars, and replanting went towards easier grapes: Timorasso crops irregularly and is prone to rot, while Cortese gave more and caused fewer headaches. By the Eighties very little was left — the same fate as many other forgotten native Italian grapes that came back into the glass. The man who put it back in the ground was Walter Massa, a grower in Monleale: his first vinification, in 1987, made six hundred bottles. Andrea Mutti and Paolo Poggio joined him, others followed in the 2000s, and the name Derthona — what the Romans called Tortona — began to circulate. The figures tell the rest: from 3 hectares in 2000 to 440 today, with the Consorzio's members rising from 35 in 2015 to 114 in 2024. On the label, though, the appellation is still Colli Tortonesi Timorasso: Derthona is not yet in the rules in force, which list only the Monleale and Terre di Libarna sub-zones. The amendment was applied for in 2020 and the proposed text, published by the Piedmont Region in October 2024, would add a third sub-zone on three levels — Piccolo Derthona, Derthona and Derthona Riserva — all from pure Timorasso. In the cellar the usual route is stainless steel, with months on the fine lees stirred from time to time; some prefer concrete. The rules require ten months of ageing from 1 November of the harvest year, twenty-one for the Riserva. That time is needed: when young Timorasso stays closed, and it only really opens after three or four years.

Un bianco che chiede pazienza e la ricambia: da giovane è tutto acidità e sapidità, con gli anni guadagna miele, frutta secca e la nota di idrocarburo che il tempo gli porta. Da aprire a tavola, su un piatto vero, e da tenerne una bottiglia in cantina per l'inverno prossimo.A white that asks for patience and repays it: young, it is all acidity and savoury bite; with the years it gains honey, dried fruit and the petrol note that time brings. Open it at the table, with a proper dish, and keep a bottle in the cellar for next winter.
