Le colline che scendono verso la sponda veronese del Garda sono figlie dei ghiacciai: anfiteatri di sassi e ghiaia lasciati lì quando il ghiaccio si è ritirato, suoli profondi e magri che si scaldano in fretta a fine inverno. Il lago tiene lontano il gelo e smorza l'afa, il monte Baldo chiude a nord: un clima così mite che accanto alle vigne cresce l'olivo. È qui che la Corvina veronese e la Rondinella — le stesse uve del Bardolino rosso, le stesse della Valpolicella — danno un vino che di rosso ha soltanto la buccia.The hills sloping down to the Verona shore of Lake Garda are the children of glaciers: amphitheatres of stones and gravel left behind when the ice withdrew, deep, lean soils that warm up quickly at the end of winter. The lake keeps the frost away and softens the summer heat, Monte Baldo closes the horizon to the north: a climate so mild that olive trees grow alongside the vines. This is where Corvina veronese and Rondinella — the same grapes as red Bardolino, the same as Valpolicella — give a wine whose only red part is the skin.
Perché il Chiaretto è un rosato fatto con uve rosse, e la sua identità sta tutta in una manciata di ore. Il disciplinare lo dice senza giri di parole: sono le uve vinificate «a parziale contatto con la buccia» ad avere diritto alla parola Chiaretto. In cantina le strade sono due, e il disciplinare le racconta entrambe. La prima è la vendemmia separata: si raccolgono in anticipo le uve destinate al rosato, quando l'acidità è ancora alta, e si lascia il mosto sulle bucce il tempo necessario a rubare un po' di colore. La seconda è il salasso: si preleva una parte di mosto dalla vasca dove stanno macerando le uve del Bardolino rosso e la si lascia proseguire da sola, senza bucce. Nel primo caso il rosato è un progetto; nel secondo è, in origine, il figlio di un rosso. Le migliori bottiglie di oggi nascono quasi sempre dalla prima strada.Because Chiaretto is a rosé made from red grapes, and its identity lies entirely in a handful of hours. The production code says so plainly: only grapes vinified 'with partial skin contact' are entitled to the word Chiaretto. In the cellar there are two roads, and the code describes both. The first is a separate harvest: the grapes destined for the rosé are picked early, while acidity is still high, and the must is left on the skins just long enough to steal a little colour. The second is the salasso, or bleeding: part of the must is drawn off the vat where the red Bardolino grapes are macerating and left to carry on alone, without skins. In the first case the rosé is a plan; in the second it begins life as the offshoot of a red. Today's best bottles almost always come from the first road.

Resta una parola su cui vale la pena essere precisi: la sapidità. Chi scrive di Bardolino la attribuisce volentieri ai sassi delle morene, e il richiamo è suggestivo, ma i minerali del suolo non passano nel calice: quella nota salina è un descrittore, il modo in cui percepiamo un vino asciutto e nervoso. Il lago, semmai, agisce prima: sulle brezze che asciugano i grappoli e sull'escursione fra il giorno e la notte, che tiene viva l'acidità. E lo stesso vale per il colore: il rosa scarico del Chiaretto è una scelta di cantina, non un certificato di qualità.One word deserves precision: savouriness. Writers on Bardolino happily credit it to the stones of the moraines, and the image is seductive, but soil minerals do not travel into the glass: that saline note is a descriptor, the way we perceive a dry, nervy wine. The lake, if anything, acts earlier: on the breezes that dry the bunches and on the day-night swing that keeps acidity alive. The same goes for colour: Chiaretto's pale pink is a stylistic choice, not a certificate of quality.
