Servono tannino maturo, alcol e un finale lungo — e la Sicilia, di rossi così, ne ha almeno tre famiglie molto diverse fra loro: l'Etna teso e sottile, il Faro speziato di Messina, il Nero d'Avola scuro del Val di Noto.Game is the meat you notice most: close-grained, lean, with a clear-cut flavour, and in the kitchen almost always herbs and spices to keep it company. Any ordinary red simply disappears beside it. What you need is ripe tannin, alcohol and a long finish — and Sicily has at least three quite different families of reds like that: the taut, slender Etna, the spicy Faro of Messina, the dark Nero d'Avola of the Val di Noto.

It is a dish that fills the whole mouth, and it wants a wine beside it that does the same.

Acidity works underneath, but it is essential: without it the wine stays warm and soft, and after three mouthfuls it tires you.

Furred game — wild boar, hare, wild rabbit — is the most substantial and calls for full-bodied reds. Feathered game — quail, pheasant, pigeon — has finer meat: tannin that is too severe smothers it, and the right glass is slimmer, with lively acidity and aromas well to the fore.
E conta la cottura. Uno stufato o un salmì stanno ore sul fuoco, il fondo si concentra e il piatto diventa più speziato e più lungo: lì si sale di struttura. A roast leaves the meat cleaner and the flavours drier: there you can stay on a tauter red, as long as it is not thin.

Sull'Etna comanda il Nerello Mascalese. Il disciplinare dell'Etna DOC ne chiede almeno l'80% nel rosso, con il Nerello Cappuccio fino al 20%, e fissa a 12,50% vol il titolo alcolometrico minimo. Sono vini di colore scarico e tannino fine, che devono all'altitudine una freschezza rara così a sud: eleganti più che potenti, con un finale amarognolo che va d'accordo con le erbe della marinata.On Etna, Nerello Mascalese rules. The Etna DOC production rules require at least 80% of it in the red, with Nerello Cappuccio up to 20%, and set the minimum alcoholic strength at 12.50% vol. These are wines of pale colour and fine tannin, which owe to altitude a freshness that is rare this far south: elegant rather than powerful, with a faintly bitter finish that agrees with the herbs of the marinade.
A Messina c'è il Faro DOC, che nasce nel solo territorio di quel comune. The blend brings together Nerello Mascalese from 45 to 60%, Nerello Cappuccio from 15 to 30% and Nocera from 5 to 10%, and allows up to a combined maximum of 15% of Nero d'Avola, Gaglioppo and Sangiovese; the alcohol minimum is 12% vol. It is a warmer, spicier red than those of Etna, and Nocera brings it a darker note that works well on braised dishes.
Nel Sud-est, infine, il Nero d'Avola: fra i rossi più caldi dell'isola, rosso rubino carico, tannico e generoso d'alcol. Nelle contrade di Pachino, a due passi dal mare, dà vini scuri e saporiti; portato in alta collina, sopra i quattrocento metri, resta più fresco e i tannini si fanno più morbidi. Il primo è il vino dello stufato, il secondo quello del ragù di tutti i giorni.In the south-east, finally, Nero d'Avola: among the warmest reds on the island, deep ruby, tannic and generous in alcohol. In the contrade of Pachino, a stone's throw from the sea, it gives dark, savoury wines; taken up into the high hills, above four hundred metres, it stays fresher and the tannins turn softer. The first is the wine for the stew, the second the wine for the everyday ragù.
Dal cinghiale alla quagliaFrom wild boar to quail
Lo stufato di cinghiale è il piatto più impegnativo della serie: cottura lunga, fondo concentrato, spezie in evidenza. Qui vanno i rossi con più corpo e più alcol — un Nero d'Avola del Val di Noto, oppure, guardando fuori dall'Italia, un Gigondas della Valle del Rodano, dove il Grenache porta calore e il Mourvèdre tannino. È la stessa logica del brasato, con una spinta in più sul lato speziato.Wild boar stew is the most demanding dish of the set: long cooking, concentrated juices, spices well to the fore. This is where the fullest-bodied, highest-alcohol reds belong — a Nero d'Avola from the Val di Noto, or, looking beyond Italy, a Gigondas from the Rhône Valley, where Grenache brings warmth and Mourvèdre brings tannin. It is the same logic as with brasato, with an extra push on the spicy side.
La lepre in salmì e il coniglio alla cacciatora stanno un gradino sotto per potenza, ma sono ancora più speziati: aceto o vino nella marinata, alloro, chiodi di garofano. Qui il Faro dà il meglio, perché unisce il tannino fine dei nerelli a una nota più scura, e non copre il piatto.Jugged hare and hunter-style rabbit sit a step below in power, but they are spicier still: vinegar or wine in the marinade, bay, cloves. Faro is at its best here, because it joins the fine tannin of the two Nerelli to a darker note, and does not smother the dish.
La selvaggina da penna arrosto — quaglia, fagiano, piccione — chiede il contrario: un rosso snello, con acidità viva e tannino garbato, che accompagni la carne invece di sovrastarla. È il territorio dell'Etna Rosso, e anche di un rosato d'annata se l'uccello è piccolo e la cottura breve.Roast feathered game — quail, pheasant, pigeon — asks for the opposite: a slender red, with lively acidity and well-mannered tannin, one that goes along with the meat instead of overwhelming it. This is Etna Rosso country, and also that of a young rosé if the bird is small and the cooking brief.
Restano gli antipasti, che nella cucina di caccia sono spesso crostini di fegatini o paté: lì una bollicina metodo classico rosé è la scelta più pulita, perché acidità ed effervescenza rimettono la bocca a posto fra un crostino e l'altro.That leaves the starters, which in hunters' cooking are often liver crostini or pâté: there a traditional-method rosé sparkler is the cleanest choice, because acidity and bubbles reset the palate between one crostino and the next.
Un'ultima cosa vale per tutti: la temperatura di servizio. Un rosso di corpo versato a venti gradi sa soprattutto di alcol e il tannino diventa ruvido: 16-18 °C bastano, e per un Etna giovane e teso anche 12-14 °C; un rosato va a 10-12 °C. Il metodo classico si versa a 8-10 °C, in un calice a tulipano e non in una flûte, che chiude i profumi.One last thing applies to all of them: serving temperature. A full-bodied red poured at twenty degrees tastes mostly of alcohol and its tannin turns rough: 16-18 °C is enough, and for a young, taut Etna even 12-14 °C; a rosé goes at 10-12 °C. Traditional-method sparkling wine is poured at 8-10 °C, in a tulip glass rather than a flûte, which shuts the aromas down.
