Va trattato con leggerezza, e le cotture tradizionali lo confermano: dal filetto dorato in padella al coregone in carpione, fino al risotto di lago sfumato e mantecato con un ricciolo di burro.Whitefish — or lavarello, as it is called on Lake Garda and the Lombard lakes — has white, fine flesh with a sweet flavour, among the most delicate of lake fish. It needs a light touch, and the traditional preparations prove it: from the pan-crisped fillet to whitefish in carpione, through to a lake risotto deglazed and finished with a curl of butter.

In the same register sits a Bianco di Custoza, a fresh, immediate Veronese blend, ready for pan-fried whitefish or for the risotto. In both cases the wine's freshness matters more than its power: it is freshness that keeps the palate clean without dulling the sweetness of the flesh.

Il persico è ancora più delicato, magro, quasi dolce. La tradizione lombarda dei laghi lo ha reso un piatto simbolo: i filetti di pesce persico infarinati e fritti, adagiati sul risotto mantecato al burro, con qualche foglia di salvia. È il caso in cui il pesce, di per sé leggerissimo, diventa più ricco per merito del burro e della crosticina della frittura. The Lombard lake tradition has made it a signature dish: perch fillets floured and fried, laid over a risotto finished with butter and a few sage leaves. This is where the fish, feather-light in itself, turns richer thanks to the butter and the crisp crust of the frying. On Lakes Como and Maggiore it is a Sunday dish, one of those that fill the trattorie by the water.

Proprio quel burro e quella frittura chiedono un vino che rinfreschi la bocca a ogni boccone. A fresh, citrusy white works well, but this is where bubbles shine: a traditional-method sparkler such as Franciacorta, born on the shores of Lake Iseo, or a mountain Trentodoc, cleanse the palate and keep pace with the risotto without weighing it down. If you would rather stay still, a Lugana or a Trentino Pinot Bianco with real drive does the same job, with a more relaxed sip.

La trota chiude il terzetto: carne tenera e magra, buona al forno, al cartoccio o alla griglia, con un filo d'olio e poche erbe. Sono cotture semplici, che rispettano il gusto del pesce, e vogliono un bianco altrettanto lineare. Un Nosiola o un Pinot bianco del Trentino, secchi e tesi, sono compagni misurati; oppure un bianco d'oltralpe più minerale, se si cerca un profilo diverso. La trota affumicata o salmonata, più saporita e grassa, alza l'asticella: qui serve un vino con un po' più di carattere — un bianco più pieno o, di nuovo, una bollicina metodo classico.Trout completes the trio: tender, lean flesh, good baked, cooked in foil or grilled, with a drizzle of oil and a few herbs. These are simple preparations that respect the fish's own flavour, and they want a white just as linear. A Trentino Nosiola or Pinot Bianco, dry and taut, make measured companions; or a more mineral white from over the Alps, for a different profile. Smoked or salmon trout, richer and fattier, raises the bar: here you want a wine with a little more character — a fuller-bodied white or, again, a traditional-method sparkler.

Whitefish, perch and trout are floured, fried and then marinated in vinegar with vegetables and herbs: it is the hardest mouthful to match, because the vinegar of the marinade unsettles almost any wine. You need a simple, very fresh white, served cold — an Erbaluce di Caluso from Canavese or the same Custoza do their job, without any claim to grandeur.

Messi in fila, i tre pesci si riassumono in una regola sola: carni fini e cotture leggere si trovano bene con bianchi freschi, tesi e non troppo aromatici, e con i metodi classici di casa; i rossi importanti e i bianchi molto segnati dal legno restano invece un passo indietro, perché coprono un pesce che vive di misura.
