Ce lo chiedono spesso, e quasi sempre a gennaio: quante calorie ha un bicchiere di vino? La risposta breve è che dipendono quasi tutte dall'alcol e pochissimo dallo zucchero. La risposta lunga è più interessante, perché ribalta un paio di convinzioni diffuse: ci sono vini dolcissimi che stanno alla pari con un rosso secco, e bollicine senza zucchero aggiunto che di leggero non hanno nulla.We get asked this often, and almost always in January: how many calories are in a glass of wine? The short answer is that almost all of them come from alcohol and very few from sugar. The long answer is more interesting, because it overturns a couple of widespread beliefs: there are very sweet wines that come out level with a dry red, and sparkling wines with no added sugar that are anything but light.

Grassi non ce ne sono, proteine nemmeno.Wine is mostly water. Almost all the energy comes from two components: the alcohol produced by fermentation and the sugars left behind when fermentation stops. There is no fat, and no protein either.

I numeri non sono opinabili, li fissa il regolamento europeo sull'informazione alimentare: un grammo di alcol etilico vale 29 kJ, cioè 7 kcal; un grammo di carboidrati, quindi di zucchero, ne vale 17 kJ, ossia 4 kcal. Per avere un riferimento, i grassi stanno a 9 kcal per grammo e le proteine a 4. L'alcol, insomma, è molto più vicino al grasso che allo zucchero. Da qui si capisce tutto il resto: a decidere il conto è la gradazione alcolica, non la dolcezza.The figures are not a matter of opinion, they are set by the European food information regulation: one gram of ethyl alcohol is worth 29 kJ, or 7 kcal; one gram of carbohydrate, and therefore of sugar, is worth 17 kJ, or 4 kcal. For reference, fat comes in at 9 kcal per gram and protein at 4. Alcohol, in other words, sits much closer to fat than to sugar. Everything else follows from that: what decides the count is alcohol content, not sweetness.

Perché «zero zuccheri» non vuol dire leggeroWhy 'zero sugar' doesn't mean light

Sulle bollicine lo zucchero è scritto in etichetta, ed è l'unico caso in cui chi compra lo legge davvero. Il regolamento europeo fissa le soglie delle menzioni: brut nature sotto i 3 grammi per litro, extra brut fra 0 e 6, brut sotto i 12, extra dry fra 12 e 17, secco fra 17 e 32.On sparkling wine the sugar is printed on the label, and it is the one case where buyers actually read it. European rules set the thresholds for each term: brut nature below 3 grams per litre, extra brut between 0 and 6, brut below 12, extra dry between 12 and 17, dry between 17 and 32.

Sembrano differenze grosse, ma nel bicchiere si sgonfiano. Fra un brut nature e un extra dry della stessa gradazione ballano circa 7 kcal: un metodo classico a 12,5% vol sta sulle 88 calorie se non è dosato e sulle 95 se è extra dry. In entrambi i casi quasi tutto il resto è alcol. Scegliere una bollicina non dosata per fare economia di calorie, insomma, sposta pochissimo.They look like big gaps, but in the glass they shrink. Between a brut nature and an extra dry of the same strength there are about 7 kcal in it: a traditional-method wine at 12.5% abv works out at around 88 calories with no dosage and 95 as an extra dry. In both cases almost all the rest is alcohol. Choosing a sparkling wine with no dosage to save on calories, in short, changes very little.

La leva è una sola, ed è la gradazione, insieme naturalmente a quanto se ne beve. Passare da un rosso a 13,5% vol a un bianco a 9 significa un terzo di alcol in meno, e fra vini secchi le calorie scendono nella stessa proporzione; se invece il vino a grado basso è dolce, lo zucchero restituisce buona parte di ciò che l'alcol toglie, come si è visto col Moscato d'Asti. Scendere di grado non è una rinuncia: sono stili interi, nati così perché il clima o il metodo di cantina lo chiedevano.There is only one lever, and it is alcohol content, along with how much you drink, of course. Going from a red at 13.5% abv to a white at 9 means a third less alcohol, and among dry wines the calories fall in the same proportion; if the low-strength wine is a sweet one, though, the sugar gives back much of what the alcohol takes away, as we saw with Moscato d'Asti. Going down in strength is not a sacrifice: these are whole styles, born that way because the climate or the cellar method called for it.

These are wines where low strength is the signature of the style, not a lightened version of something else. Light in alcohol, that is: those that declare 130 grams of sugar per litre are not light on calories at all.
