La Região Demarcada dei Vinhos Verdes è delimitata dal 1908 e copre oggi circa ventiquattromila ettari frazionati in migliaia di piccole parcelle: il vino, qui, è nato come una coltura fra le altre e non come monocoltura. The soils are uniform and largely granitic, fertile and high in acidity, and they give wines that are lean and nervy rather than fat. The Região Demarcada dos Vinhos Verdes was mapped out in 1908 and today covers some twenty-four thousand hectares split into thousands of small plots: wine here began as one crop among many, not as a monoculture. There are nine sub-regions — Monção e Melgaço, Lima, Cávado, Ave, Basto, Sousa, Amarante, Baião, Paiva — and the northernmost is the exception that explains a great deal: along the river Minho, on the Spanish border, Monção e Melgaço loses part of the ocean's reach and takes on a maritime-continental character. The grapes ripen further, and the wines carry more weight.

Loureiro gives the profile most readily associated with the appellation: white flowers, citrus, an acidity that makes you salivate. Alvarinho is the same grape as the Albariño of the Rías Baixas, just across the border, and in Monção e Melgaço it signs the most structured, longest-lived whites: to put "Alvarinho" on the label — an indication allowed only here — the code asks at least 11.5% vol, against the 8% of basic Vinho Verde and the 9% of wines that carry only the sub-region name, and that difference in minimum alcohol is the quickest way to grasp that these are two different wines. Around them, Trajadura rounds out, Arinto holds the acidity, Avesso gives the fullest wines. Many labels are still blends; the single-variety versions, which the code permits, are the novelty of recent decades.

For centuries vines were trained high: up trees, in the “vinha de enforcado,” or on pergolas held up by granite posts, the “latadas.” It was not a whim but arithmetic — on tiny holdings the ground was needed for maize and vegetables, and the vine climbed where it cast no shade. Such high training gave barely ripe grapes and sharp, often cloudy wines, with that light spritz — the “agulha” — born of a fermentation still finishing in the bottle. The move to the “cruzeta” and then to simple cordon, with the vines brought down and the bunches in the sun, changed Vinho Verde more than any fashion did: today it is clean and precise, and its acidity is a choice, not an accident.

Restano due malintesi da sciogliere. Sciolti i due nodi, il Vinho Verde smette di essere il vino delle vacanze e diventa quello che è: un bianco atlantico da bere giovane, con una sottozona che sa anche aspettare.Two misunderstandings are still worth clearing up. The first is the name: “verde” is not the colour of the wine — a pale straw with greenish glints — but its youth, and by extension the green of the landscape that makes it. The second is the spritz: in traditional bottlings it came from fermentation, while in many of today's basic wines it is added in the cellar, and it is worth knowing that before crediting it to the terroir. That “sea” flavour many find in it is likewise a tasting descriptor, not salt carried on the wind: the Atlantic's influence comes through the climate — rain, humidity, cool nights that keep the acidity alive — rather than in the glass. With those two knots undone, Vinho Verde stops being the wine of the holidays and becomes what it is: an Atlantic white to drink young, with one sub-region that also knows how to wait.
