Sylvaner

Vitigno a bacca bianca dell'Europa centrale, nato in AustriaWhite grape from central Europe, born in Austria

Sylvaner is the white of restraint: low in aromatics, never loud, living on freshness and a mineral weave that turns deep only where soil and altitude push it. Born in Austria from a natural cross between Traminer (Savagnin) and the old Österreichisch Weiß, it shaped the history of German whites and found in Italy, on the terraces of the Isarco Valley, one of its most taut and elegant expressions.

Il carattereThe character

ColoreColour
Giallo paglierino tenue, spesso con riflessi verdolini in gioventù.Pale straw yellow, often with greenish hints when young.
NasoNose
Fairly intense yet measured: apple and pear, meadow herbs and fresh hay, a mineral touch; this is not an aromatic grape, and it owns it.
BoccaPalate
Fresh and saline, medium-bodied, with a dry, straight finish; in mountain versions the acidity turns taut and ages well.

Dove cresceWhere it grows

For centuries Sylvaner was one of Germany's most planted whites, at its best in Franken (Franconia) on the Muschelkalk limestone soils, travelling in the squat Bocksbeutel bottle; it is also at home in Rheinhessen and the Pfalz. It is grown in Alsace — where it even signs a Grand Cru — and in the Swiss Valais, where it goes by Johannisberg. In Italy it has just one true heartland: the Isarco Valley (Eisacktal), in Alto Adige, where it climbs ventilated terraces between 300 and 700 metres on poor, gravelly, broken-rock soils. Here the cold nights and wide temperature swings give crisp aromas and an acidity that is the wine's signature.

In the Isarco Valley Sylvaner finds altitude, poor soils and cool nights: three conditions that concentrate aromas and keep acidity alive. The wines come out straight, mineral and long-lived — the point where this shy variety truly reveals itself.

The dominant style: stainless-steel vinification, a fresh, mineral profile, to drink young. This is the everyday Sylvaner of the Isarco Valley and Franconia.
Da vigne vecchie e affinamento lungoOld vines and long ageing
From old vines and with time on the lees or in large casks, Sylvaner gains body, complexity and a surprising ability to age.
Dolce da vendemmia tardivaSweet, from late harvest
Rarer, mostly in Germany: from overripe grapes it yields sweet, silky wines balanced by an ever-present acid spine.

A tavolaAt the table

Its freshness and saline weave make it a versatile table white. It accompanies Alto Adige starters — speck, canederli dumplings, barley soup; it pairs with asparagus, a tricky vegetable for many wines, which its low aromatics do not mask but support; it sits well with trout and lake fish, and with fresh alpine cheeses.

CuriositàDid you know

For years Müller-Thurgau — the most planted German grape of the twentieth century — was believed to be a cross of Riesling and Sylvaner; DNA later revealed that the second parent is not Sylvaner but a minor variety, Madeleine Royale. The first written record of Sylvaner in Germany dates to 1659, when its planting was registered at the Castell estate in Franconia: a date local wineries still celebrate on their labels today.
