Pinot Grigio is one of the best-known Italian whites in the world, and for many it means a fresh, easy glass. Behind that reputation, though, is a grape with two souls: the light, zippy drinking of the Triveneto and the hillside and high-altitude whites, more savoury and structured, that can even age. It all begins with a greyish-pink berry, a mutation of Pinot Noir.

Dove cresceWhere it grows
The home of Italian Pinot Grigio is the Triveneto: Friuli Venezia Giulia, Trentino-Alto Adige and the Veneto account for most of the production. This is where the 'delle Venezie' DOC was born in 2017, the appellation that gathers the lowland Pinot Grigio and brought order to large-scale production.
The quality leap comes with the hills and altitude. In Alto Adige, on the Collio slopes around Gorizia and on the Colli Orientali of Friuli, elevation and the strong day-to-night swing stretch out ripening: the wines are tenser, more perfumed and longer-lived, far from the light, commercial style.
Beyond Italy the grape changes name and style. In Alsace, as Pinot Gris, it gives rich and sometimes sweet whites; in Germany it is the dry Grauburgunder or the softer Ruländer; it has also found a home in Oregon and other cool corners of the New World.
In the mountains Pinot Grigio is at its best. High-altitude vineyards, alpine soils and the wide day-to-night swing give it acidity, perfume and a structure that lasts for years: in the Alto Adige Riserve the grape shows its most serious side.

A tavolaAt the table
In its freshest guise Pinot Grigio is a table all-rounder. Its freshness and savouriness make it ideal with seafood antipasti, poached or grilled fish, vegetable risottos and light pasta. It also works with fried food, where its acidity cleans the palate with every bite.
The more structured hillside versions and the ramato styles call for bolder dishes: white meats, roast chicken, eggs, medium-aged cheeses, legume soups. These are the Pinot Grigios to keep on the table through the meal, not just for the aperitivo.

Pinot Grigio as a modern white wine was born almost by chance. In the early 1960s the Veneto winery Santa Margherita began vinifying it 'in white', separating the must from the grey skins straight away: the result was a pale, fresh, clean wine that won over Italy first and then the American market, kicking off the global phenomenon.
The name tells the berry's story: 'grigio' (grey) because at ripeness the skin is greyish-pink, almost coppery. In Alsace it was long called 'Tokay', until a European rule that took full effect in 2007 banned the term to avoid confusion with Hungarian Tokaji: there it is now simply Pinot Gris.
