Colore scarico, profumo di lampone e di rosa: la Freisa si presenta come un rosso gentile. Poi arriva il sorso, con un tannino fitto e un'acidità viva, e si capisce perché per secoli abbia diviso i piemontesi fra chi la beveva giovane e vivace, in versione quotidiana, e chi ci vedeva la materia di un rosso serio. Fresco e tannico: acidità e tannino sono le due durezze che ne reggono la struttura, e nelle versioni da uve ben mature il tannino resta fitto ma si distende in una trama vellutata. Chiude asciutto, con una punta amarognola.Dry, moderately warm, medium-bodied. Fresh and tannic: acidity and tannin are the two firm elements that give it a backbone, and where the grapes ripen fully the tannin stays dense but relaxes into a velvety weave. The finish is dry, with a faintly bitter edge.

La Freisa è un'uva piemontese e quasi soltanto piemontese. Il suo cuore sono le colline a sud del Po che vanno da Moncalieri a Verrua Savoia — la Collina Torinese, dai 300 a oltre 550 metri — e il Chierese che vi si appoggia: terreni di medio impasto calcareo-argillosi, giacitura esclusivamente collinare, mai sotto i 180 metri. Da lì il vitigno è sceso verso il Monferrato astigiano, dove in molti comuni alla sinistra del Tanaro è la seconda uva coltivata dopo il Barbera, e ha raggiunto le Langhe.

È una varietà robusta e generosa, piuttosto resistente alle malattie fungine ma poco alla siccità: per questo nell'Astigiano la si coltiva sui versanti di media collina non troppo assolati. Matura tardi, nella terza decade di settembre, poco prima del Barbera. Fuori dal Piemonte se ne trova pochissima: qualche vigna nell'Oltrepò Pavese e sulla collina di San Colombano, in Lombardia, e qualche ceppo in Argentina e in California, portato là dagli emigranti piemontesi.
Freisa is a Piedmontese grape, and almost only that. Its heart lies in the hills south of the Po between Moncalieri and Verrua Savoia — the Turin hillside, from 300 to over 550 metres — and in the Chieri hills that lean against them: medium-textured limestone-clay soils, strictly hillside sites, never below 180 metres. From there the vine moved down into the Asti Monferrato, where in many villages on the left bank of the Tanaro it is the second grape after Barbera, and reached the Langhe.

It is a sturdy, generous variety, fairly resistant to fungal diseases but not to drought: that is why around Asti it is planted on mid-slope sites that are not too exposed to the sun. It ripens late, in the last ten days of September, just before Barbera. Outside Piedmont there is very little of it: a few vineyards in the Oltrepò Pavese and on the hill of San Colombano, in Lombardy, and a few vines in Argentina and California, taken there by Piedmontese emigrants.

Qui la vigna sta solo in collina, dai 180 metri in su, su terreni di medio impasto calcareo-argillosi, con i fondovalle umidi e poco soleggiati esclusi dalla denominazione: sono le condizioni che il disciplinare chiede per assicurare all'uva una maturazione piena, e con essa un tannino meno ruvido. La tipologia Superiore, che chiede almeno dodici mesi prima di uscire e, se passa in legno, ci resta almeno sei mesi, è la versione in cui il vitigno mostra la trama più compiuta. Non è però l'unico indirizzo: nel Monferrato astigiano e nelle Langhe si fanno Freise altrettanto convincenti.This is the appellation that carries the name of the place where Freisa was born: historical sources place the variety between the Chieri hills and the Turin hillside, and the rulebook — approved in 1973 — says so plainly. Here the vines grow only on slopes, from 180 metres up, on medium-textured limestone-clay soils, with damp, poorly sunlit valley floors ruled out of the appellation: these are the conditions the rulebook asks for to bring the fruit to full ripeness, and with it a less rough tannin. The Superiore style, which must wait at least twelve months before release and, if it goes into wood, stays there at least six months, is where the grape shows its most complete weave. It is not the only address, though: the Asti Monferrato and the Langhe make Freisa that is every bit as convincing.

La Freisa è nata per la tavola piemontese di tutti i giorni. Nella versione vivace accompagna il salame, i tomini freschi e gli antipasti misti: l'effervescenza e la freschezza rinfrescano la bocca fra un boccone grasso e l'altro. La versione ferma, tannica e strutturata, si sposa bene con i piatti di sostanza — gli agnolotti al sugo d'arrosto, il bollito misto con la salsa verde, un brasato — dove la carne fondente ammorbidisce il tannino e ne rivela la trama vellutata. Con i formaggi di media stagionatura, dove il gusto è deciso ma non ancora aggressivo, l'acidità del vino tiene bene il passo. La versione dolce, infine, sta al suo posto solo a fine pasto, accanto a una torta di nocciole o a un dolce al cioccolato.Freisa was made for the everyday Piedmontese table. The frothy version goes with salami, fresh tomini cheeses and mixed antipasti: the fizz and the freshness refresh the mouth between one rich mouthful and the next. The still version, tannic and structured, calls for substantial dishes — agnolotti in roasting juices, mixed boiled meats with green sauce, a braise — where the meltingly tender meat softens the tannin and reveals its velvety weave. With medium-aged cheeses, strong in taste but not yet aggressive, the wine's acidity keeps pace. The sweet version, finally, belongs only at the end of the meal, beside a hazelnut cake or a chocolate dessert.

La Freisa è un vitigno quasi senza sinonimi. La scheda del Registro Nazionale lo dice con una punta di ironia: «come per il Barbera, così per questo notissimo vitigno piemontese potremmo dire che di veri sinonimi non ve ne sono». Il database del CNR ne accerta tre. Due sono varianti dialettali del nome, Fresa e Fresia; la terza, Munfrina, è il nome con cui la chiamavano a Gattinara, e ricorda il Monferrato da cui la vite era arrivata. Gli altri che si incontrano nei libri sono equivoci: sempre a Gattinara la dicevano «Spanna monferrina» o «Spannina», ma la vera Spanna è il Nebbiolo; e la «Freisa grossa» o «di Nizza» del Monferrato, come hanno chiarito le analisi genetiche, è un'altra uva, la Neretta cuneese.

C'è poi una vigna singolare. Il disciplinare del Freisa di Chieri elenca fra i luoghi della denominazione, dentro il Comune di Torino, la «Regione Villa della Regina»: un vigneto che sta nel parco di una residenza sabauda, dentro la città, fra le poche vigne urbane produttive d'Italia. Il vino che ne esce è un Freisa di Chieri Superiore.
Freisa is a grape almost without synonyms. The National Register entry says so with a touch of irony: 'as with Barbera, so with this very well known Piedmontese grape we might say that true synonyms do not exist'. The CNR database records three. Two are dialect forms of the name, Fresa and Fresia; the third, Munfrina, is what they called it at Gattinara, and recalls the Monferrato the vine had come from. The others found in books are misunderstandings: at Gattinara too it was called 'Spanna monferrina' or 'Spannina', but the true Spanna is Nebbiolo; and the 'Freisa grossa' or 'di Nizza' of the Monferrato is, as genetic analysis has shown, another grape altogether, Neretta cuneese.

Then there is a singular vineyard. The Freisa di Chieri rulebook lists among the sites of the appellation, within the city limits of Turin, the 'Regione Villa della Regina': a vineyard inside the grounds of a Savoy residence, within the city, one of the few productive urban vineyards in Italy. The wine it yields is a Freisa di Chieri Superiore.

Percentuali, tipologie e riferimenti normativi provengono dai disciplinari ufficiali (catalogo MIPAAF); i dati ampelografici dalla scheda del Registro Nazionale e dall'Italian Vitis Database (CNR), quelli genetici dalla ricostruzione genealogica pubblicata su Scientific Reports nel 2020. La parentela diretta con il Nebbiolo è accertata: ne è un genitore.
