Il Soave nasce nella parte orientale dei Monti Lessini, dove i suoli sono in gran parte di origine vulcanica: basalti scuri e ben drenati, con affioramenti calcarei, su cui la Garganega — uva di maturazione tardiva, poco aromatica ma ricca di estratto — trova il suo posto ideale. Il complementare Trebbiano di Soave aggiunge sapidità e vivacità. La sapidità che si ritrova nel calice è un carattere del gusto, non un minerale che passa dalla roccia al vino: nasce dall'ambiente di collina, dai suoli ben drenati e dalle notti fresche in cui matura l'uva. La sottozona Classico è la zona storica della denominazione, delimitata già nel 1931 sui rilievi di Soave e Monteforte d'Alpone e allevata tradizionalmente a pergola veronese. Dalla stessa Garganega, lasciata appassire, nasce anche il Recioto di Soave, dolce che nel 1998 fu la prima DOCG del Veneto.Soave is born in the eastern part of the Lessini Mountains, where the soils are largely of volcanic origin: dark, well-drained basalts with limestone outcrops, on which Garganega — a late-ripening grape, not very aromatic but rich in extract — finds its ideal place. The complementary Trebbiano di Soave adds savouriness and liveliness. The saltiness found in the glass is a feature of taste, not a mineral that passes from the rock into the wine: it comes from the hillside environment, the well-drained soils and the cool nights in which the grapes ripen. The Classico subzone is the appellation's historic area, delimited as early as 1931 on the slopes of Soave and Monteforte d'Alpone and traditionally trained on the Veronese pergola. From the same Garganega, left to dry, comes Recioto di Soave too — the sweet wine that in 1998 became the first DOCG of Veneto.

La forma della vigna, qui, è un fatto storico prima che tecnico. La pergola veronese è documentata in zona fin dall'alto Medioevo e il disciplinare la ammette ancora oggi, accanto alla spalliera e al GDC, entro un tetto di cinquantamila gemme per ettaro. Negli ultimi decenni è però cambiata da dentro: file più strette, potature molto più corte, meno gemme per pianta. La ragione è che alla Garganega non manca la maturazione — arriva tardi, spesso in ottobre — ma la misura: è un'uva vigorosa e sui suoli vulcanici profondi produce più di quanto convenga. Sulle pendenze la raccolta resta a mano, mentre in pianura, dove si lavora a macchina, si è imposta la spalliera. Il Classico mette per iscritto questa scelta: quattordici tonnellate di uva per ettaro invece delle quindici concesse al Soave, mezzo grado in più di alcol e un grammo in più di estratto al consumo, e l'uscita rinviata al primo febbraio dell'anno successivo alla vendemmia invece che al primo dicembre.The shape of the vineyard here is a matter of history before it is a matter of technique. The Veronese pergola is documented in the area from the early Middle Ages, and the production code still allows it alongside vertical trellis and the Geneva Double Curtain, within a ceiling of fifty thousand buds per hectare. Over recent decades, though, it has changed from the inside: narrower rows, far shorter pruning, fewer buds per vine. The reason is that Garganega is never short of ripeness — it comes late, often in October — but of restraint: it is a vigorous variety, and on deep volcanic soils it yields more than is good for it. On the steeper slopes picking is still done by hand, while on the plain, where the work is mechanised, vertical trellis has taken over. The Classico writes that choice into the rules: fourteen tonnes of grapes per hectare instead of the fifteen allowed for Soave, half a degree more alcohol and one gram more dry extract at release, and a release date pushed back to 1 February of the year after the harvest instead of 1 December.

Da qualche tempo i nomi delle colline non sono più soltanto un uso di cantina. Il disciplinare vigente allega alla denominazione trentatré Unità Geografiche Aggiuntive — Foscarino, Froscà, Monte Grande, Castelcerino, Fittà, Carbonare e le altre — con i confini depositati nello schedario viticolo, e consente al produttore di scriverle in etichetta accanto al nome del vino; chi vinifica una parcella sola può indicarvi anche il nome della singola vigna. È il riconoscimento normativo di ciò che nel bicchiere si sentiva da tempo: dentro il Classico non c'è un solo Soave. Sulle colline con forti affioramenti calcarei, dove le radici trovano spesso meno di mezzo metro di terra e le rese scendono da sole, il vino guadagna complessità; sui basalti più profondi resta più largo e immediato. È la ragione per cui, dentro la stessa denominazione, le bottiglie che portano il nome di una collina chiedono all'incirca il doppio di quelle che portano il solo nome della zona.For some time now the names of the hills have been more than cellar shorthand. The current production code appends thirty-three Unità Geografiche Aggiuntive — additional geographical units: Foscarino, Froscà, Monte Grande, Castelcerino, Fittà, Carbonare and the rest — with their boundaries filed in the vineyard register, and lets producers print them on the label beside the name of the wine; anyone vinifying a single plot may also name that individual vineyard there. It is the legal acknowledgement of something the glass had been saying for a while: inside the Classico there is not one Soave but several. On the hills with heavy limestone outcrops, where roots often find less than half a metre of soil and yields drop of their own accord, the wine gains complexity; on the deeper basalts it stays broader and more immediate. That is why, within the same appellation, the bottles carrying the name of a hill ask roughly twice the price of those carrying only the name of the zone.
