Il Greco è un'uva di antica origine, che la tradizione lega ai coloni greci giunti in Campania nell'antichità; a Tufo trovò la sua terra d'elezione, e la famiglia di Marzo ne diffuse la coltivazione nel borgo a partire dal Seicento. Il paese deve il nome al tufo, la pietra vulcanica friabile su cui poggiano i vigneti, e per oltre un secolo visse anche delle sue miniere di zolfo, scoperte nel 1866 e attive nell'estrazione fino al 1972. La denominazione, però, non si ferma al borgo: comprende otto comuni della provincia di Avellino — Tufo, Altavilla Irpina, Chianche, Montefusco, Prata di Principato Ultra, Petruro Irpino, Santa Paolina e Torrioni — e il disciplinare vi ammette soltanto i vigneti collinari di buona esposizione, escludendo i fondovalle umidi e poco soleggiati; la resa non può superare le dieci tonnellate per ettaro. Sono proprio questi suoli — tufo, marne e argille, ricchi di zolfo — insieme all'altitudine, con i vigneti distesi fra i 300 e i 650 metri, e alle notti fresche dell'Appennino a dare al vino la sua tensione e quel timbro affumicato di pietra focaia. La nota minerale, va detto, è un descrittore del profilo e non un sapore di roccia che passa nel calice: l'influenza del terreno passa dall'ambiente di crescita — il drenaggio, le escursioni termiche fra il giorno e la notte, la maturazione lenta — più che direttamente dal bicchiere. Ne esce un bianco di corpo e di nervo, raro al Sud per longevità: da giovane è tutto frutta gialla, agrumi e fiori bianchi, mentre con qualche anno guadagna profondità e sviluppa note di idrocarburo, miele e frutta secca. È uno dei pochi bianchi italiani che premiano davvero la pazienza della cantina. Oltre alla versione ferma, la sua acidità e la sua materia reggono bene anche la presa di spuma del metodo classico: il disciplinare chiede almeno diciotto mesi sui lieviti in bottiglia dal tiraggio, che salgono a trentasei per la menzione Riserva, e ne nascono spumanti di buona profondità. In etichetta, poi, sono vietate le qualificazioni laudative — niente «superiore» o «selezionato» — mentre è ammessa la menzione «vigna»: è per questo che le selezioni di singolo vigneto si riconoscono dal nome del podere e non da un aggettivo.Greco is an ancient grape that tradition links to the Greek settlers who reached Campania in antiquity; in Tufo it found its chosen home, where the di Marzo family spread its cultivation in the village from the seventeenth century. The town takes its name from tufo, the crumbly volcanic stone the vineyards sit on, and for over a century it also lived off its sulphur mines, discovered in 1866 and worked until 1972. The appellation, though, does not stop at the village: it takes in eight municipalities in the province of Avellino — Tufo, Altavilla Irpina, Chianche, Montefusco, Prata di Principato Ultra, Petruro Irpino, Santa Paolina and Torrioni — and there the production code admits only well-exposed hillside vineyards, ruling out the damp, poorly sunned valley floors; yields may not exceed ten tonnes per hectare. It is these very soils — tuff, marl and clay, rich in sulphur — together with altitude, the vineyards spread between 300 and 650 metres, and the cool Apennine nights that give the wine its tension and that smoky, flinty signature. The mineral note, it should be said, is a descriptor of the profile and not a taste of rock passing into the glass: the soil's influence runs through the growing environment — drainage, the day-to-night temperature swings, slow ripening — rather than directly through the glass. The result is a full-bodied white with nerve, rare in the South for its longevity: when young it is all yellow fruit, citrus and white flowers, while with a few years it gains depth and develops notes of petrol, honey and dried fruit. It is one of the few Italian whites that truly reward the patience of the cellar. Beyond the still version, its acidity and substance also carry the traditional-method second fermentation well: the production code calls for at least eighteen months on the lees in bottle from tirage, rising to thirty-six for the Riserva mention, and the result is sparkling wines of good depth. On the label, laudatory qualifiers are also banned — no «superiore» or «selezionato» — while the «vigna» mention is allowed: that is why single-vineyard selections are recognised by the name of the plot rather than by an adjective.

Il verdettoThe verdict

Lontano dall'idea dei vini del Sud come morbidi e solari, il Greco di Tufo è teso, sapido e di carattere, costruito tanto per la tavola quanto per la cantina. Bevuto giovane convince per freschezza e profumi, ma è dopo qualche anno che mostra la sua statura, quando la mandorla e le note di idrocarburo prendono profondità. È un vino che chiede pazienza e una buona tavola, e che ripaga con interesse: resta un punto di riferimento tra i grandi bianchi italiani.Far from the idea of Southern wines as soft and sunny, Greco di Tufo is taut, savoury and full of character, built as much for the table as for the cellar. Drunk young it convinces with freshness and aromas, but it is after a few years that it shows its stature, when the almond and petrol notes take on depth. It is a wine that asks for patience and a good table, and repays it with interest: it remains a reference point among Italy's great whites.
