A slope tilted to the south catches the rays almost head-on, so the same amount of light is packed onto less surface and warms the soil and the bunches more. On the Mosel the rows climb slate slopes turned to the sun — the site Germans call 'Sonnenuhr', the sundial — because only there does Riesling reach ripeness in a climate that forgives little.

The east-facing slope sees the sun first, while the air is still cold: a gentle wake-up that quickly dries the dew and keeps disease at bay. The west-facing slope, instead, gets its light in the afternoon, when it's already warm: it ripens further and pushes up the degrees, often giving fuller, more alcoholic wines.

Dove il sole non manca mai, il problema non è maturare ma non esagerare: uno zucchero che sale troppo in fretta schiaccia l'acidità e appiattisce i profumi. Così, dal Nord America al Sud Italia, chi cerca freschezza guarda ai versanti meno esposti — a nord, o a est per prendere solo il sole gentile del mattino — e sale di quota, dove l'escursione termica tra giorno e notte rimette in equilibrio il frutto.In hot climates the reasoning flips. Where the sun is never in short supply, the challenge isn't ripening but not overdoing it: sugar that climbs too fast crushes acidity and flattens the aromatics. So from North America to southern Italy, those chasing freshness look to the less-exposed slopes — north-facing, or east to catch only the gentle morning sun — and climb in altitude, where the day-night temperature swing brings the fruit back into balance.
