Tre venti che i disciplinari mettono per iscritto — e che non lavorano nel modo che ci si aspetta.Three winds written into the rulebooks — and they do not work the way you would expect.

Del vento si parla quasi sempre come di un dettaglio di colore locale: la bora sul Carso, il maestrale che pulisce il cielo di Sardegna, il mistral che scende lungo il Rodano. Sembra una cartolina. Non lo è: il vento sta scritto nei testi ufficiali. Il disciplinare del Carso DOC lo descrive, quello del Vermentino di Sardegna lo mette fra le componenti principali del clima dell'isola, il cahier des charges dell'AOC Lirac arriva a contarne i giorni. Letti uno accanto all'altro, raccontano una storia diversa da quella che si sente di solito.Wind is almost always talked about as local colour: the bora on the Carso, the maestrale scouring the sky over Sardinia, the mistral running down the Rhône. It sounds like a postcard. It is not: the wind is written into the official texts. The Carso DOC rulebook describes it, the Vermentino di Sardegna one lists it among the main components of the island's climate, and the cahier des charges of AOC Lirac even counts its days. Read side by side, they tell a story rather different from the usual one.

Il Carso è l'altopiano calcareo che il Friuli-Venezia Giulia condivide con la Slovenia, e il suo disciplinare non gira intorno alla questione. La bora è «un vento continentale, particolarmente presente nel periodo che va da ottobre a marzo», proviene da est-nord-est ed è «apportatore di aria secca». D'inverno supera di frequente i cento chilometri orari, e il testo le attribuisce un effetto preciso: prosciuga il terreno e accentua lo stato siccitoso del suolo.The Carso is the limestone plateau that Friuli-Venezia Giulia shares with Slovenia, and its rulebook does not dance around it. The bora is «a continental wind, particularly present in the period from October to March», it comes from east-north-east and «brings dry air». In winter it frequently passes one hundred kilometres an hour, and the text credits it with a precise effect: it dries out the ground and deepens the drought of the soil.

Ma da ottobre a marzo la vite è ferma. È il disciplinare stesso a notarlo: «nel corso del periodo vegetativo della vite, però, il vento non ha quell'irruenza e violenza dei mesi invernali, a tutto vantaggio delle colture agrarie». A lavorare per l'uva non è la bora che fa cronaca, ma la ventilazione moderata di primavera e d'estate: scaccia le nebbie dell'Adriatico, abbassa l'umidità dell'aria e contiene le malattie crittogamiche. Lo stesso vento soffia oltre confine, dove la valle del Vipava ne fa la propria firma.But from October to March the vine is dormant. The rulebook itself points it out: «during the vine's growing season, however, the wind does not have the vehemence and violence of the winter months, entirely to the benefit of agricultural crops». What works for the grapes is not the headline-making bora but the moderate ventilation of spring and summer: it clears the Adriatic fogs, lowers air humidity and holds fungal disease in check. The same wind blows across the border, where the Vipava valley has made it its signature.

Il disciplinare del Vermentino di Sardegna DOC dedica al vento più righe di quante ce ne si aspetti da un testo normativo. L'isola, scrive, sta sotto il dominio delle correnti occidentali richiamate dall'Atlantico verso le basse pressioni mediterranee, e ha «in tutte le stagioni, una notevole ventosità». La conclusione è netta: «il vento pertanto è una delle più importanti componenti naturali del clima sardo». E il più frequente, aggiunge, è il maestrale, che arriva da nord-ovest.The Vermentino di Sardegna DOC rulebook gives the wind more lines than you would expect from a legal text. The island, it writes, lies under westerly currents drawn in from the Atlantic towards Mediterranean low pressure, and has «considerable windiness in every season». The conclusion is blunt: «the wind is therefore one of the most important natural components of the Sardinian climate». And the most frequent one, it adds, is the maestrale, which arrives from the north-west.

Non dice che il vento accompagna il clima sardo: dice che lo compone, alla pari della pioggia e del sole. Il disciplinare dell'Alghero DOC lo conferma dal suo angolo di isola, dove le caratteristiche climatiche della zona, «abbinate alla presenza del vento dominante da Maestrale, rendono l'ambiente consono ad un idoneo sviluppo della vite».It does not say the wind accompanies the Sardinian climate: it says the wind composes it, on a par with rain and sun. The Alghero DOC rulebook confirms it from its own corner of the island, where the area's climate characteristics, «combined with the presence of the dominant Maestrale wind, make the environment suitable for the proper development of the vine».

Il più preciso dei tre è francese. Il cahier des charges dell'AOC Lirac, nella versione vigente omologata con l'arrêté del 4 luglio 2024, non si limita a nominare il mistral: lo misura. Un forte vento del nord, freddo e secco, che soffia in media centottanta giorni all'anno. Metà anno, sulla riva destra del Rodano, fra i 50 e i 200 metri di quota.The most precise of the three texts is French. The cahier des charges of AOC Lirac, in the version in force approved by the order of 4 July 2024, does not merely name the mistral: it measures it. A strong northerly wind, cold and dry, blowing on average one hundred and eighty days a year. Half the year, on the right bank of the Rhône, between 50 and 200 metres of altitude.

E spiega cosa fa, in una riga che vale un manuale di agronomia: il mistral «limita l'umidità del fogliame, e favorisce così la lotta naturale contro le malattie crittogamiche». Meno acqua sulle foglie, meno funghi, meno trattamenti. I numeri che completano il quadro il testo li aveva già dati poco prima, insieme ai giorni del vento: 2.700 ore di sole all'anno e meno di 700 millimetri di pioggia.And it explains what the wind does, in a single line worth a whole agronomy manual: the mistral «limits the humidity of the foliage, and thereby favours the natural fight against fungal diseases». Less water on the leaves, fewer fungi, fewer treatments. The text had already given the figures that complete the picture a little earlier, alongside the count of windy days: 2,700 hours of sunshine a year and under 700 millimetres of rain.

Il filo comune ai tre documenti non è il freddo. Nessuno dei tre dice che il vento raffredda l'uva e le salva l'acidità, che è poi la spiegazione che si sente più spesso. Il disciplinare del Carso dice quasi il contrario: la ventilazione rende il cielo più sereno, fa aumentare la radiazione solare e concorre «a far salire la temperatura», e così rende più efficace la fotosintesi «a vantaggio dell'accumulo di sostanze zuccherine nei grappoli». Il vento, in quel testo, porta zucchero, non freschezza.The thread running through the three documents is not cold. Not one of them says that wind chills the grapes and saves their acidity, which happens to be the explanation you hear most often. The Carso rulebook says almost the opposite: ventilation clears the sky, increases solar radiation and helps «make the temperature rise», and in doing so makes photosynthesis more effective «to the benefit of sugar accumulation in the bunches». Wind, in that text, brings sugar, not freshness.

Ad attribuirgli una cosa sola e concreta — aria secca sul fogliame, quindi grappoli sani — sono due testi su tre: il Carso e Lirac, con parole diverse e lo stesso meccanismo. Il disciplinare sardo si ferma prima: il vento è componente del clima, e le estati «sempre ventilate» danno le condizioni ottimali per la maturazione delle uve, non per la sanità dei grappoli, di cui quel testo non parla mai. Quell'aria secca è un vantaggio che si vede in vigna prima che nel calice, e ha un rovescio che il Carso non nasconde: lo stesso vento che asciuga le foglie prosciuga il terreno, e d'estate l'acqua manca. Il terroir ha altre leve che si misurano allo stesso modo: l'altitudine e il caldo che sposta la vendemmia.Two texts out of three attribute one single, concrete thing to it — dry air on the foliage, therefore healthy bunches: the Carso and Lirac, in different words and with the same mechanism. The Sardinian rulebook stops earlier: there the wind is a component of the climate, and the «always ventilated» summers give ideal conditions for ripening the grapes, not for the health of the bunches, which that text never mentions. That dry air is an advantage you see in the vineyard before you see it in the glass, and it has a flip side the Carso does not hide: the same wind that dries the leaves dries out the ground too, and in summer the water runs short. Terroir has other levers measured the same way: altitude and the heat that moves the harvest.
