In Naoussa, in Imathia, it sits on the south-eastern slopes of Mount Vermio, between 150 and 400 metres, on soils that change even within a single vineyard; the climate is temperate Mediterranean with continental influences, cold winters and fairly hot summers. Further north-west, in the district of Florina, the Amyndeon plateau takes it between 570 and 750 metres: it is the northernmost of the four zones and the one with the highest average elevation, 615 metres, ringed by three mountains — Vermio, Vitsi and Voras — and looking out over two lakes, Vegoritida and Petron, which temper its climate. The sandy soils of the plateau have kept alive many old ungrafted vines.

The fourth appellation is Rapsani, in Thessaly, at the foot of Mount Olympus, where the river Pinios divides the mountain of the gods from Mount Kissavos: there the grape goes into a traditional blend with Krassato and Stavroto, planted at roughly one third each, as is still the practice today. Beyond these four zones Xinomavro turns up across northern and central Greece.

Con i formaggi di pecora stagionati il lavoro lo fa la freschezza, che ripulisce il palato fra un assaggio e l'altro; sui funghi e sulla selvaggina in umido un Naoussa maturo mette in gioco i suoi terziari.Lively acidity, tight tannin and that note of tomato and olive: Xinomavro asks for tasty, substantial dishes. Its home ground is roast and braised meat — lamb baked with herbs, beef stifado with baby onions — where the tannin meets the meat and the acidity cuts through the fat of the sauce. With aged sheep's cheeses the work is done by the freshness, which cleans the palate between one bite and the next; on mushrooms and braised game a mature Naoussa brings its tertiary notes into play.
Il rosato e lo spumante di Amyndeon aprono invece la tavola: le pite salate greche — al formaggio, agli spinaci, ai porri — le verdure grigliate, i formaggi freschi. Lì contano la freschezza e le bollicine, che alleggeriscono il boccone. In tavola i rossi vanno serviti a 16-18 °C, i rosati a 10-12 °C, il metodo classico a 8-10 °C; e a un Naoussa giovane conviene mezz'ora di caraffa prima di versarlo.The rosé and the sparkling wine of Amyndeon open the meal instead: the Greek savoury pies — cheese, spinach, leek — grilled vegetables, fresh cheeses. There it is freshness and bubbles that count, lightening the mouthful. At the table the reds go at 16-18 °C, the rosés at 10-12 °C, the traditional-method sparkling at 8-10 °C; and a young Naoussa benefits from half an hour in a decanter before serving.

Più sorprendente è quello che dice il DNA. Dei due genitori dello Xinomavro se ne conosce uno solo, confermato dai marcatori: è l'Heunisch Weiss, la vecchia uva bianca europea che in Francia si chiama Gouais Blanc. È lo stesso genitore dello Chardonnay, che nasce dall'incrocio fra Heunisch Weiss e Pinot. Due uve lontanissime per casa e per carattere, e un ramo in comune sull'albero genealogico.More surprising is what the DNA says. Of Xinomavro's two parents only one is known, confirmed by markers: it is Heunisch Weiss, the old European white grape the French call Gouais Blanc. It is the same parent as Chardonnay, which comes from a cross between Heunisch Weiss and Pinot.
