Naoussa è una cittadina della Macedonia, nel nord della Grecia continentale, ai piedi del monte Vermio. Qui, sulle pendici esposte a sud-est fra i 150 e i 400 metri, lo Xinomavro trova la sua casa: la denominazione, riconosciuta come PDO nel 1971, ammette solo questo vitigno. Per struttura ed evoluzione lo Xinomavro viene spesso accostato, come stile, al Nebbiolo delle Langhe: stessa trama di tannino e acidità, stesso colore poco carico, stessa attitudine al tempo — un paragone di carattere, non di parentela. È il rosso del nord greco: entra in quattro denominazioni — Naoussa, Amyndeon, Goumenissa e Rapsani — ma è a Naoussa, in purezza, che dà la sua versione più longeva. La mano dell'uomo ha scritto due capitoli. Il primo è quello delle case storiche — Boutari, tra le prime a imbottigliare un rosso a denominazione in Grecia, e la famiglia Dalamara, radicata da generazioni — e della grande cooperativa di viticoltori, Vaeni. Here, on the southeast-facing slopes between 150 and 400 metres, Xinomavro finds its home: the appellation, recognised as a PDO in 1971, allows this grape alone. The name itself says it: in Greek it means 'sour' and 'black', and describes a grape of pale colour but great acidity and tannin, finicky and demanding, one that needs the right terroir and low yields to give its best. The soils vary greatly even within a single vineyard, the climate is Mediterranean with continental influences — cold winters and hot summers — and the result is a translucent red, austere when young, that can age for years. For structure and development, Xinomavro is often likened, in style, to the Nebbiolo of the Langhe: the same weave of tannin and acidity, the same light colour, the same aptitude for time — a comparison of character, not of kinship. It is the red of northern Greece: it enters four appellations — Naoussa, Amyndeon, Goumenissa and Rapsani — but it is at Naoussa, on its own, that it gives its longest-lived version. The hand of man has written two chapters. The first belongs to the historic houses — Boutari, among the first to bottle an appellation red in Greece, and the Dalamara family, rooted for generations — and to the large growers' cooperative, Vaeni. The second is the revival of the last twenty years: small growers and names like Thymiopoulos, Kir-Yianni and Karydas have reread Xinomavro through old vines, single crus and a light touch, taking Naoussa onto tables around much of the world.
