Il Grechetto è il bianco di riferimento dell'Umbria. Cresce sulle colline attorno a Orvieto e Todi, sui Colli Martani, e poi a Montefalco, Assisi, Torgiano e lungo le rive del lago Trasimeno: praticamente ovunque, in regione, si faccia vino bianco.Grechetto is Umbria's benchmark white. It grows on the hills around Orvieto and Todi, across the Colli Martani, and then at Montefalco, Assisi, Torgiano and along the shores of Lake Trasimeno: nearly everywhere white wine is made in the region.
Oltre l'Umbria arriva nella Tuscia laziale — la zona di Orvieto è a cavallo fra le due regioni — e in Toscana, verso la Valdichiana. C'è poi un salto a sorpresa fino all'Emilia-Romagna, dove la sua versione più fine viaggia sotto un altro nome (ne parliamo più sotto). Predilige colline calcareo-argillose, ben drenate e soleggiate; la buccia spessa lo difende dall'umidità autunnale e gli consente anche una raccolta tardiva.Beyond Umbria it reaches the Lazio Tuscia — the Orvieto zone straddles the two regions — and Tuscany, towards the Valdichiana. There is also a surprising leap to Emilia-Romagna, where its finer version travels under another name (more on that below). It favours well-drained, sunny clay-limestone hills; its thick skin shields it from autumn damp and even allows a late harvest.

In its fresh, steel-made guise it goes well with fish — baked, grilled or fried — with shellfish and seafood pastas, with spring vegetables and savoury tarts; and with everyday Umbrian cooking, from torta al testo to herb frittatas.
Le versioni più strutturate, passate in legno o da vigne vecchie, e la chiusura di mandorla lo portano più lontano: carni bianche come pollo e coniglio, piatti al tartufo e ai funghi, pecorini umbri di media stagionatura. Le analisi del DNA hanno svelato una sorpresa: il Grechetto di Todi è la stessa uva del Pignoletto dei Colli Bolognesi, in Emilia-Romagna.Under the name 'Grechetto' there are in fact two distinct varieties. Grechetto di Orvieto, thick-skinned, is the historic base of the Orvieto whites; Grechetto di Todi — also called 'gentile', and finer — is the one behind the great single-varietal wines. DNA analysis revealed a surprise: Grechetto di Todi is the very same grape as the Pignoletto of the Colli Bolognesi, in Emilia-Romagna.
