Sotto la rupe di tufo, fra le colline a sud-ovest dell'Umbria e i primi paesi dell'alto Lazio, nasce un bianco che porta il nome della sua città. Procanico e Grechetto per almeno il 60%, colore paglierino, profumo delicato e quel lieve finale amarognolo che il disciplinare mette nero su bianco: l'Orvieto si beve giovane e si serve fresco. E dal giugno 2025 può scendere fino a 10% vol.Below the tufa cliff, among the hills of south-western Umbria and the first villages of upper Lazio, a white wine is made that carries the name of its town. Procanico and Grechetto for at least 60%, straw-yellow colour, delicate perfume and that faint bitter finish written into the production code: Orvieto is drunk young and served cool. And since June 2025 it can go down to 10% abv.

Gli Etruschi che fondarono Velzna sulla rupe scavarono nel tufo cantine su tre piani: si pigiava in alto, il mosto colava a fermentare nel piano di mezzo, il vino maturava in fondo. Ne usciva — lo ricorda il disciplinare stesso — un vino amabile e frizzante, e per secoli l'Orvieto restò un bianco dolce: dal porto fluviale di Pagliano scendeva lungo il Tevere verso Roma, e alla corte pontificia fu tra i vini preferiti, da Paolo III Farnese a Gregorio XVI. Oggi domina la versione secca, ma la tradizione del dolce non si è spenta: dove le nebbie del mattino salgono dal fiume, la Botrytis cinerea attacca gli acini e nasce l'Orvieto Muffa Nobile. La zona storica, quella che in etichetta si chiama Classico, fu delimitata nel 1931; la DOC arrivò nel 1971. Sotto i filari c'è un mare che non c'è più: argille e sabbie con conchiglie fossili, e sopra i tufi e le lave degli antichi apparati vulcanici vulsini. Non sono minerali che passano nel bicchiere — la «mineralità» resta un descrittore di chi assaggia — ma un suolo che drena bene, in un'estate poco piovosa, su vigne fra i cento e i cinquecento metri. E nel giugno 2025 un nuovo decreto ha abbassato a 10% vol il minimo alcolico dell'Orvieto: vini più leggeri, pensati per la tavola d'estate.The Etruscans who founded Velzna on the cliff dug three-storey cellars into the tufa: the grapes were pressed at the top, the must ran down to ferment on the middle floor, and the wine matured at the bottom. What came out — as the production code itself recalls — was a medium-sweet, faintly sparkling wine, and for centuries Orvieto remained a sweet white: from the river port of Pagliano it travelled down the Tiber towards Rome, and at the papal court it was among the favourite wines, from Paul III Farnese to Gregory XVI. Today the dry version prevails, but the sweet tradition has not died out: where the morning mists rise from the river, Botrytis cinerea attacks the berries and Orvieto Muffa Nobile is born. The historic zone, the one labelled Classico, was delimited in 1931; the DOC came in 1971. Under the rows lies a sea that no longer exists: clays and sands with fossil shells, and above them the tufa and lava of the ancient Vulsini volcanoes. These are not minerals that pass into the glass — 'minerality' remains a taster's descriptor — but a soil that drains well, in a summer with little rain, on vineyards between one hundred and five hundred metres. And in June 2025 a new decree lowered Orvieto's minimum alcohol to 10% vol: lighter wines, meant for the summer table.

Un bianco di misura, che convince per nitidezza più che per potenza: fiori, frutta bianca e quel congedo ammandorlato che lo rende riconoscibile al primo sorso. Servito freddo, su una tavola d'estate, è esattamente dove vuole stare; e nelle selezioni del Classico Superiore mostra di saper aspettare qualche anno in bottiglia.A white of measure, convincing for its clarity rather than its power: flowers, white fruit and that almond-tinged farewell that makes it recognisable at the first sip. Served cold, on a summer table, it is exactly where it wants to be; and in the Classico Superiore selections it shows it can wait a few years in bottle.
