La patria è il Tokaj, nel nord-est dell'Ungheria: colline ai piedi dei monti Zemplén, dove il Bodrog confluisce nel Tisza. Le nebbie autunnali che salgono dai fiumi favoriscono la Botrytis cinerea, la muffa nobile che disidrata gli acini e concentra zuccheri e aromi. I suoli mescolano argille (il nyirok) e loess su un sottosuolo vulcanico di tufo, che dà drenaggio e freschezza in quota. Il Furmint matura tardi e ha buccia sottile: perfetto per l'appassimento sulla pianta. Oltre a Tokaj cresce sul cono vulcanico di Somló, nell'ovest ungherese, dove dà bianchi secchi di grande tensione; e supera i confini con nomi diversi — Šipon in Slovenia, Moslavac in Croazia, Mosler in Austria.Its homeland is Tokaj, in north-eastern Hungary: hills at the foot of the Zemplén mountains, where the Bodrog flows into the Tisza. The autumn mists rising from the rivers favour Botrytis cinerea, the noble rot that shrivels the berries and concentrates sugars and aromas. The soils mix clays (the nyirok) and loess over a volcanic tuff subsoil, giving drainage and freshness at altitude. Furmint ripens late and has thin skin: perfect for drying on the vine. Beyond Tokaj it grows on the volcanic cone of Somló, in western Hungary, where it gives taut dry whites; and it crosses borders under other names — Šipon in Slovenia, Moslavac in Croatia, Mosler in Austria.

Il Furmint secco è un compagno di tavola versatile: la sua acidità viva e la spalla sapida stanno bene con il pesce di fiume e di mare, i crostacei, il pollame in salsa e i formaggi stagionati. Il Tokaji Aszú, invece, è il classico da fine pasto — il foie gras, i formaggi erborinati come il gorgonzola, i dolci alle albicocche e alla frutta secca.
