Una valle calda, una notte freddaA hot valley, a cold night

Il Clare Valley si allunga per una quarantina di chilometri nel Mid North del Sud Australia, circa 130 km a nord di Adelaide e ben dentro l'entroterra. The vineyards climb between 190 and 600 metres in altitude, and here lies the first key: elevation, afternoon breezes and, above all, the huge diurnal range. At the height of ripening, afternoons around 40 °C give way to nights that fall to a few degrees above zero. It is this swing that slows ripening and locks into the grape the acidity that makes the difference in the glass. The result is a small geographic paradox: although it is a warm area, the Clare produces wines with a profile usually linked to cool climates. No wonder more Australian Riesling is harvested here than in any other region — the grape is so at home that it is almost a synonym for the valley.

Watervale e Polish Hill: due suoli, due RieslingWatervale and Polish Hill: two soils, two Rieslings

To the south, around Watervale, red soils over a limestone base dominate — a sort of terra rossa that yields more open, perfumed Rieslings, with a citrus drive and softer edges. East of Clare, the Polish Hill River district sits on broken slate and shale: poor, free-draining soils that push the wine towards a more austere, knife-edged profile built to last. What we often call "minerality" is not salt travelling from the rock into the glass: it is a sensory impression — taut acidity, salinity and finesse — that these arid soils and the temperature swing know how to draw. Two addresses, two characters, the same grape: that is part of why the Clare so fascinates anyone who likes to understand where their wine comes from.

Ad Auburn, all'imbocco meridionale della valle, Jeffrey Grosset apre la sua cantina nel 1981, ricavandola da un vecchio deposito del latte. Produzione contenuta, lavoro minuzioso in vigna, e da subito due Riesling-bandiera: il Polish Hill, teso e severo, e lo Springvale di Watervale, più pronto e immediato. La conduzione è certificata biologica e biodinamica, scelta coerente con l'idea di un bianco che racconti il sito senza trucchi. Ma il contributo che ha fatto storia è un altro: nel 2000 Grosset è tra i produttori del Clare che decidono in blocco di abbandonare il sughero per il tappo a vite, proprio sui Riesling. Una mossa azzardata per l'epoca, pensata per proteggere quei profumi sottili e quell'acidità dai capricci del sughero. Funzionò: oggi il tappo a vite è lo standard del Riesling australiano di qualità, e la straordinaria tenuta nel tempo di questi vini ne è la prova migliore.In Auburn, at the southern gateway of the valley, Jeffrey Grosset opened his winery in 1981, carving it out of an old milk depot. A small output, meticulous work in the vineyard and, from the start, two flagship Rieslings: Polish Hill, taut and severe, and Springvale from Watervale, readier and more immediate. The vineyards are certified organic and biodynamic, a choice in keeping with the idea of a white that should tell its site without tricks. But the contribution that made history is another: in 2000 Grosset was among the Clare producers who decided, together, to drop cork for the screwcap on their Rieslings. A daring move at the time, meant to protect those delicate aromas and that acidity from cork's whims. It worked: today the screwcap is the standard for quality Australian Riesling, and the remarkable ageing of these wines is the best proof of it.

Da giovane il Riesling del Clare è secco e quasi spartano: giallo paglierino tenue, naso di lime, pompelmo e fiori bianchi, bocca dritta, fresca e sapida, senza un grammo di zucchero a coprirla. È un vino che chiede pazienza. Con cinque-sette anni di bottiglia — e spesso molti di più — il colore vira al dorato e il naso si arricchisce di miele, frutta secca e quella nota di idrocarburo, il cosiddetto sentore di cherosene, che nel Riesling maturo è una firma del vitigno e non un difetto. A tavola la sua acidità è una lama pulita: taglia il fritto di pesce e la tempura di verdure, accompagna ostriche e crudi di mare, e tiene testa al piccante e agli agrumi della cucina thailandese o di un pollo al limone. Da giovane va servito fresco ma non ghiacciato, intorno agli 8-10 °C; le bottiglie con qualche anno di affinamento danno di più fra i 10 e i 14 °C.Young, Clare Riesling is dry and almost spartan: pale straw yellow, a nose of lime, grapefruit and white flowers, a straight, fresh, saline palate with not a gram of sugar to soften it. It is a wine that asks for patience. With five to seven years in bottle — and often many more — the colour turns golden and the nose fills out with honey, dried fruit and that hydrocarbon note, the so-called whiff of kerosene, which in mature Riesling is a signature of the grape and not a flaw. At the table its acidity is a clean blade: it cuts through fried fish and vegetable tempura, partners oysters and raw seafood, and stands up to the chilli and citrus of Thai cooking or a lemon chicken. When young, serve it cool but not ice-cold, around 8-10 °C; bottles with a few years of ageing give more between 10 and 14 °C.
