La Sicilia DOC è una denominazione giovane con una storia lunga alle spalle: nasce come IGT nel 1995 e diventa DOC solo nel 2011, con una zona che comprende l'intero territorio amministrativo dell'isola. Dentro un perimetro così largo il Grillo occupa un angolo preciso, la Sicilia occidentale, dove il disciplinare descrive un ambiente costiero con temperatura media annua intorno ai 18 gradi, 400-500 millimetri di pioggia l'anno e quasi nessuna precipitazione nella stagione calda. Sono le condizioni in cui il Grillo ha fatto per un secolo un mestiere solo: dare zucchero, struttura e tenuta all'ossidazione al vino liquoroso di Marsala. Quando il Marsala è entrato in crisi, il vitigno è quasi scomparso dalle vigne, e la sua seconda vita come bianco secco è cosa degli ultimi trent'anni. Quanto sia cambiato il giudizio su quest'uva lo dice il disciplinare stesso: accanto al Grillo di sempre prevede le tipologie superiore, riserva, vendemmia tardiva, passito e spumante. Il superiore chiede rese più basse — dieci tonnellate per ettaro invece di quattordici — e mezzo grado in più; la riserva parte da 12,50% vol e conta l'invecchiamento dal primo novembre dell'anno della vendemmia. Sono le regole che si scrivono per un bianco a cui si riconosce la capacità di aspettare, non per un'uva da taglio. Anche la bollicina ha il suo paletto: per il Grillo spumante il disciplinare ammette il solo metodo Martinotti-Charmat, mentre la rifermentazione in bottiglia resta riservata alle tipologie Bianco e Rosato. Il vino che si beve oggi con la specificazione Grillo in etichetta contiene almeno l'85% di quell'uva, e nessuna delle sei case di questa pagina ne indica altre; tre — Cusumano, Rallo e Colomba Bianca — dichiarano il Grillo in purezza. Il sapore, nella definizione del disciplinare, è «dal secco all'abboccato, armonico, pieno, sapido»: la sapidità è scritta nella norma, non è una nostra suggestione. E la stessa norma fissa per il Grillo un'acidità totale minima di 4,5 grammi per litro, che sale a 5 per lo spumante: la freschezza è il secondo pilastro di questo bianco.The Sicilia DOC is a young appellation with a long history behind it: it began as an IGT in 1995 and only became a DOC in 2011, with an area covering the island's entire administrative territory. Within that vast perimeter Grillo occupies one precise corner, western Sicily, where the production rules describe a coastal environment with an average annual temperature of around 18 degrees, 400-500 millimetres of rain a year and almost none during the hot season. These are the conditions in which Grillo did a single job for a century: giving sugar, structure and resistance to oxidation to the fortified wine of Marsala. When Marsala fell into crisis the variety nearly vanished from the vineyards, and its second life as a dry white is a matter of the last thirty years. How much thinking about this grape has changed is written into the production rules themselves: alongside the Grillo of old they provide for the superiore, riserva, late harvest, passito and sparkling styles. Superiore demands lower yields — ten tonnes per hectare instead of fourteen — and half a degree more alcohol; riserva starts at 12.50% vol and counts its ageing from the first of November of the harvest year. These are rules written for a white credited with the ability to wait, not for a blending grape. The bubbles have their own limit too: for sparkling Grillo the rules allow the Charmat method alone, while bottle refermentation stays reserved for the Bianco and Rosato styles. The wine sold today with Grillo on the label holds at least 85% of that grape, and none of the six houses on this page lists any other; three — Cusumano, Rallo and Colomba Bianca — state pure Grillo. The taste, in the words of the production rules, runs 'from dry to off-dry, harmonious, full, savoury': savouriness is written into the norm, not a fancy of ours. And the same norm sets a minimum total acidity of 4.5 grams per litre for Grillo, rising to 5 for the sparkling version: freshness is this white's second pillar.
