La risposta di casa è un rosso delle Langhe di tannino fine e acidità viva; per chi preferisce un sorso più fresco c'è il metodo classico dell'Alta Langa.Tajarin are the egg pasta of the Langhe: very thin tagliolini, rolled from a dough rich in egg yolks that gives them a deep yellow colour. Here they come to the table with a slowly cooked meat ragù and, in season, with white truffle shaved over the hot plate. It is a rich first course with an aroma that lingers: the wine has to clean the butter and yolks from the palate, keep pace with the juices of the meat and leave room for the truffle. The home answer is a Langhe red with fine tannin and lively acidity; for anyone who prefers a fresher sip there is the traditional-method sparkling wine of Alta Langa.

Nel piatto ci sono tre cose da tenere insieme. La prima è la pasta stessa: i tuorli dell'impasto e il burro del condimento lasciano in bocca una patina morbida e grassa. La seconda è il ragù, carne tritata e cotta a lungo che porta sugo e sostanza. La terza è il tartufo bianco, che sul piatto caldo libera un profumo intenso e persistente ma delicato: basta poco a coprirlo.There are three things on the plate that have to be held together. The first is the pasta itself: the yolks in the dough and the butter in the dressing leave a soft, rich coating in the mouth. The second is the ragù, minced meat cooked for a long time, which brings juices and substance. The third is the white truffle, which on the hot plate releases an aroma that is intense and lingering but delicate: it takes very little to cover it.
A ognuna risponde una leva diversa nel bicchiere. Al burro e ai tuorli rispondono l'acidità e, in una bollicina, l'effervescenza: fanno salivare e ripuliscono la bocca, così il boccone successivo arriva fresco come il primo. Acidity, and in a sparkling wine the bubbles, answer the butter and the yolks: they make you salivate and clean the palate, so the next forkful arrives as fresh as the first. Tannin answers the juices of the meat: it dries the palate and gives the wine backbone. The truffle needs a wine with intense, persistent aromas, one that stays beside it for the whole mouthful instead of vanishing after a moment.
Il limite è l'eccesso. Un rosso molto concentrato, con un tannino giovane e duro o con il legno nuovo in evidenza, sovrasta un piatto che resta comunque un primo, e soprattutto copre il tartufo. Per questo un Barolo giovane e potente funziona meno di un Barbaresco o di un Langhe Nebbiolo, e la barbera, con poco tannino e molta acidità, va così bene. A very concentrated red, with young, hard tannin or obvious new oak, overwhelms a dish that is still a first course, and above all it covers the truffle. That is why a young, powerful Barolo works less well than a Barbaresco or a Langhe Nebbiolo, and why Barbera, with little tannin and plenty of acidity, does so well. Il nebbiolo. È l'uva di casa per questo piatto, perché cresce sulle stesse colline delle Langhe da cui vengono i tajarin e il tartufo d'Alba. Porta insieme acidità alta e tannino, la coppia che il piatto chiede, e profumi che si allungano con gli anni. Il Barbaresco DOCG ne è una delle espressioni di riferimento; il Langhe Nebbiolo è la versione più giovane e più accessibile della stessa uva.Nebbiolo. This is the home grape for the dish, because it grows on the same hills of the Langhe that tajarin and Alba truffle come from. It brings high acidity and tannin together, exactly the pair the dish asks for, and aromas that open up with the years. Barbaresco DOCG is one of its benchmark expressions; Langhe Nebbiolo is the younger, more accessible version of the same grape.
La barbera. Ha poco tannino e un'acidità spiccata: sul burro e sul ragù ripulisce la bocca a ogni sorso, e non entra in conflitto con il tartufo. È il rosso quotidiano del Piemonte; una Barbera d'Alba Superiore, affinata in botte grande, ha più struttura per un ragù ricco.Barbera. It has little tannin and marked acidity: with the butter and the ragù it cleans the palate at every sip, and it does not clash with the truffle. It is the everyday red of Piedmont; a Barbera d'Alba Superiore, aged in large casks, has more structure for a rich ragù.
Il dolcetto. Ha tannini delicati e un'acidità più contenuta della barbera, e sta bene sui primi della tradizione piemontese. Con molto tartufo è la scelta meno intensa di profumi: dà il meglio quando nel piatto il protagonista è il ragù.Dolcetto. It has gentle tannins and lower acidity than Barbera, and it sits well with the traditional Piedmontese first courses. With plenty of truffle it is the least aromatic choice: it is at its best when the ragù is the star of the plate.
L'Alta Langa. Per chi preferisce le bollicine c'è il metodo classico del Piemonte. L'effervescenza e l'acidità puliscono la bocca dal burro e dai tuorli, e una lunga sosta sui lieviti dà alla bollicina la complessità per stare accanto al ragù.Alta Langa. For anyone who prefers bubbles there is Piedmont's traditional method. The bubbles and the acidity clean the butter and yolks from the palate, and a long time on the lees gives the wine the complexity to sit beside the ragù.
Fuori dal Piemonte. In Borgogna il pinot nero fa un lavoro simile a quello del nebbiolo, con meno tannino: acidità viva per il burro, frutto e profumi che non coprono il tartufo. Un rosso di villaggio della Côte de Beaune è la scelta per chi vuole un sorso più leggero.Beyond Piedmont. In Burgundy, Pinot Noir does a job similar to Nebbiolo's, with less tannin: lively acidity for the butter, fruit and aromas that do not cover the truffle. A village red from the Côte de Beaune is the choice for anyone who wants a lighter sip.
