Fuoco breve, fuoco lungo, marinate: come cambia il vino sulla braceShort fire, long fire, marinades: how the wine changes at the grill

Non conta solo il taglio: conta quanto la crosta e il fumo pesano nel piattoIt is not only the cut that counts: it is how much crust and smoke weigh on the plate

At the grill it is not only the meat that decides: what decides is how deeply the fire has marked it. A slice seared for two minutes, a sausage with a dark crust and a herb-marinated shoulder call for three different wines, and the big red is not always the answer. The rule of thumb is simple, and it is easy to remember at the wine shop.

Che cosa chiede la braceWhat the grill asks for

The grill works in three ways. It dries the surface and builds the crust, which brings smoke, toasted notes and a bitter edge; it melts the fat, which drips onto the coals and comes back as aroma; and it keeps the juices inside the meat. Each of those three things asks the wine for a different lever.

A juicy mouthful is handled by tannin and by the alcohol of the wine, which dry the palate and put it back in order: this is the ground of full-bodied reds, an old-vine Nero d'Avola or a South African Pinotage. Where the fat is abundant and drips onto the fire, as it does with sausages, ribs and pancetta, the lever changes: you need freshness, bubbles and a savoury finish, so a dry traditional-method sparkler or a fizzy Lambrusco.

There is a limit, and it is worth respecting. A dark crust already carries a bitter edge, and green tannin or very high alcohol only multiply it: better a red with ripe tannin and medium structure, served cellar-cool. Save the more powerful bottles for the juiciest cuts and long cooking, where they have something to do.

Tre gradi di fuocoThree degrees of fire

Fuoco breve. Short fire. Sliced steak, rare rib steak, beef skewers: the crust is thin and the juices dominate. The wine stays ready to drink and medium-bodied, with clear fruit and little oak: an Etna Rosso made from Nerello Mascalese, served at 12-14 degrees and never left to warm up on the table. If you prefer a fuller red, a Rioja Crianza or a Barbera d'Asti will do, but they belong with the full-bodied reds and want 16-18 degrees.

Fuoco lungo e affumicato. Long, smoky fire. Sausages, ribs, pork shoulder, lamb cooked slowly over indirect heat: here the crust is dark, the smoke shows and the mouthful is rich. The wine needs backbone and ripe tannin, a Pinotage from Stellenbosch or an old-vine Sicilian Nero d'Avola; and with sausages, where the fat is more obvious, a dry fizzy Lambrusco Reggiano clears the mouth between bites better than any red.

Marinate, erbe e spezie. Marinades, herbs and spices. Devilled chicken, lamb with rosemary, vegetables and white meats off the grill: here the aroma of the dish comes first, and the wine has to match it in intensity rather than in power. A structured white without sweet oak notes, such as an Alto Adige Pinot Blanc matured in large casks, or a medium-bodied rosé from Gaglioppo work far better than a muscular red; with chicken it is also worth reading our guide to summer white meats.

La tavola mista: due o tre bottiglieA mixed table: two or three bottles

A real barbecue is never a single dish: sausages, vegetables, a piece of beef and a few ribs all arrive together. Trying to cover everything with one bottle usually means choosing one that is too big, and it flattens half the table. Two or three work better: open with a dry sparkling wine for the starters and the first sausages, carry on with a ready, medium-bodied red for the bulk of the grill, and keep the most structured bottle for the rib steak or the lamb, opened last.

Temperature matters as much as the choice. In summer a red left near the fire quickly reaches twenty-five degrees and tastes of nothing but warm alcohol: half an hour in the fridge before pouring changes the sip. The bands are the usual ones, 8-10 degrees for sparkling wines, 10-14 for structured whites, 10-12 for rosés, 12-14 for light reds and 16-18 for full-bodied ones, and we set them out in full in our guide to serving temperature.

Anyone at the table who does not drink red is not left out: a structured white and a medium-bodied rosé work with grilled food better than people expect, especially with chicken, lean pork and vegetables. And if you want advice dish by dish, from rib steak to sausage, you will find it in our dedicated guide to grilled meat cut by cut.

This advice applies to wood or charcoal grilling with meats that are not heavily spiced: a very hot marinade or a sweet sauce changes the picture and calls for a wine low in alcohol, with some residual sugar. The temperatures given are those typical of each style, not the reading of a single vintage.
