Tokaj è il regno del dolce. Per tre secoli il vino che ha reso celebre questo angolo di Ungheria nord-orientale è stato l'Aszú: il bianco da muffa nobile che alle corti d'Europa chiamavano «vino dei re». Eppure, negli ultimi vent'anni, qui è cresciuta un'idea diversa — prendere la stessa uva, il Furmint, e farne un bianco secco. Nella cittadina di Tokaj, dove il fiume Bodrog incontra il Tisza, c'è una cantina grande quanto una stanza: un uomo solo, Demeter Zoltán, che imbottiglia Furmint secco da nove piccole vigne. For three centuries the wine that made this corner of north-east Hungary famous was Aszú: the noble-rot white that Europe's courts called the «wine of kings». Yet over the past twenty years a different idea has taken hold here — to take the same grape, Furmint, and make it dry. In the little town of Tokaj, where the Bodrog meets the Tisza, there is a cellar no bigger than a room: one man, Demeter Zoltán, bottling dry Furmint from nine small vineyards. It is not the invention of something new: dry wine has always existed here, as the everyday drink. What is new is taking it seriously.

Vulcani spenti, fiumi e nebbiaExtinct volcanoes, rivers and fog

Il paesaggio di Tokaj nasce da vulcani spenti da tempo: le colline arrotondate dello Zemplén, oggi coperte di filari, sono roccia vulcanica antica. Sopra di essa i suoli sono soprattutto argille — i contadini le chiamano nyirok — e loess, sabbie fini portate dal vento. A valle, l'incontro tra Bodrog e Tisza e le nebbie d'autunno tengono umide le vigne: è quell'umidità a far attecchire la muffa nobile, la Botrytis, da cui nasce l'Aszú dolce. Le vigne migliori erano già state classificate nel 1737 con un decreto reale, tra le prime zone vinicole delimitate al mondo; nel 2002 l'UNESCO ha riconosciuto il paesaggio storico di Tokaj come Patrimonio dell'umanità. Il vulcano, però, non passa nel bicchiere: la tensione e la sapidità del Furmint vengono dalla sua acidità e da suoli poveri e drenanti, che mettono in difficoltà la vite. È un fatto d'ambiente, non un travaso di minerali nel vino. Ogni vigna ha un nome — il dűlő, il cru di queste colline.Tokaj's landscape was shaped by long-extinct volcanoes: the rounded Zemplén hills, now lined with vines, are ancient volcanic rock. Over it the soils are mostly clay — the locals call it nyirok — and loess, fine wind-blown silt. Down in the valley, the meeting of the Bodrog and the Tisza and the autumn fogs keep the vineyards damp: that humidity lets noble rot, Botrytis, settle on the grapes, and from it comes the sweet Aszú. The finest plots were already classified in 1737 by royal decree, among the first wine areas to be delimited anywhere; in 2002 UNESCO listed Tokaj's historic landscape as a World Heritage Site. The volcano, though, does not end up in the glass: the tension and the savoury edge of Furmint come from its acidity and from poor, free-draining soils that put the vine under stress. It is a matter of environment, not minerals passing into the wine. Every vineyard has a name — the dűlő, the cru of these hills.

Il Furmint, oltre il dolceFurmint, beyond the sweet

Il Furmint è un'uva tardiva, dalla buccia spessa e dall'acidità naturale spiccata. Di per sé è poco aromatico, ma trasparente: lascia leggere il suolo e l'annata. È il motore dell'Aszú — concentra lo zucchero senza perdere la freschezza — ma da sempre serviva anche a fare il vino secco di base, quello che un tempo si vendeva sfuso e raramente finiva in bottiglia. La svolta è del 2000: quell'anno la raccolta delle uve muffate fu scarsa e a Királyudvar avanzò del vino base. István Szepsy e Demeter Zoltán lo imbottigliarono da una singola vigna di Mád, il cru Úrágya. Fu uno dei primi Furmint secchi che il mondo prese sul serio, e da lì lo stile è diventato una categoria. Nel calice il Furmint secco è un giallo paglierino con riflessi dorati; al naso mela verde, pera, mela cotogna, scorza d'agrume e un soffio affumicato; in bocca è fresco e sapido, di buon corpo, con un finale teso. Con gli anni vira verso il miele, la cera e sentori di idrocarburi che ricordano il Riesling maturo — un segno dell'età in bottiglia.Furmint is a late-ripening grape with thick skins and marked natural acidity. It is not very aromatic in itself, but it is transparent: it lets the soil and the vintage show through. It is the engine of Aszú — concentrating sugar without losing freshness — yet it has always also made the dry base wine, the kind once sold in bulk and rarely bottled. The turning point came in 2000: that year the harvest of botrytised grapes was small, and at Királyudvar some base wine was left over. István Szepsy and Demeter Zoltán bottled it from a single Mád vineyard, the Úrágya cru. It was one of the first dry Furmints the world took seriously, and from there the style became a category. In the glass dry Furmint is straw-yellow with golden glints; the nose offers green apple, pear, quince, citrus peel and a wisp of smoke; the palate is fresh and savoury, well-bodied, with a taut finish. With age it turns towards honey, beeswax and a hint of petrol that recalls mature Riesling — a sign of years in bottle.

Demeter Zoltán ha fondato la sua azienda nel 1996. Coltiva circa sette ettari divisi in nove parcelle sparse fra i comuni della zona — Veres, dal suolo rosso, Lapis, Szerelmi e altre — e vinifica ciascuna vigna separatamente, per leggere la differenza tra un cru e l'altro. Ne escono dalle dodici alle quindicimila bottiglie l'anno, e circa tre quarti sono vini secchi. La cantina sta in una casa storica nel centro di Tokaj, a pochi passi dai due fiumi: un lavoro quasi interamente nelle sue mani. Lavora con lieviti indigeni e poca tecnologia, in vecchie botti di legno, e — dettaglio che dice molto di lui — durante la fermentazione fa suonare musica classica in cantina. Demeter è stato uno dei protagonisti della rinascita del Furmint secco: quella vendemmia del 2000 a Királyudvar porta anche la sua firma. Oggi continua per la sua strada, fatta di poche bottiglie e di vigne piccole, dove conta più il luogo della tecnica. È la versione artigiana di una storia che, intanto, ha cambiato l'immagine di Tokaj nel mondo.Demeter Zoltán founded his estate in 1996. He farms about seven hectares split into nine plots scattered across the region — Veres, on red soil, Lapis, Szerelmi and others — and vinifies each vineyard separately, to read the difference between one cru and the next. The result is twelve to fifteen thousand bottles a year, about three quarters of them dry. The cellar sits in a historic house in the town of Tokaj, a few steps from the two rivers: the work is almost entirely his own hands. He uses native yeasts and little technology, old wooden casks, and — a detail that says a lot about him — plays classical music in the cellar during fermentation. Demeter was one of the figures behind the dry-Furmint revival: that 2000 vintage at Királyudvar carries his name too. He keeps to his own path of few bottles and small vineyards, where place counts for more than technique. It is the artisan version of a story that, in the meantime, has changed the way the world sees Tokaj.

Cosa ci beviWhat to drink it with

Il Furmint secco è un vino da tavola nel senso migliore: l'acidità tesa e il corpo lo rendono versatile. Sta bene sul pesce di fiume e di lago — una trota affumicata, una zuppa di pesce — e accompagna il pollo arrosto e il maiale. Regge anche i piatti ungheresi più ricchi, quelli con paprica e panna acida: la sua freschezza pulisce il palato e tiene testa al grasso. Con i formaggi di latte vaccino stagionati, duri e saporiti, il finale sapido si allunga. Le versioni più mature, dai sentori di miele e cera, danno il meglio su un pollo alle erbe o su un piatto di funghi. Servito fresco ma non ghiacciato, intorno ai 10-12 °C, mostra meglio il suo nerbo.Dry Furmint is a wine for the table in the best sense: its taut acidity and body make it versatile. It sits well with river and lake fish — smoked trout, a fish soup — and accompanies roast chicken and pork. It also holds up to richer Hungarian dishes, those with paprika and sour cream: its freshness cleans the palate and stands up to the fat. With hard, savoury aged cow's-milk cheeses, the savoury finish stretches out. The more mature versions, with their honey and wax notes, are at their best with herb-roasted chicken or a plate of mushrooms. Served cool but not ice-cold, around 10–12 °C, it shows its backbone.
