Di un terroir raccontiamo quasi sempre la roccia: il calcare, l'argilla, il galestro. Sopra la roccia però c'è uno strato sottile e vivo, fatto di radici, funghi, batteri e materia organica in decomposizione: è lì che la vite mangia e beve. Da qualche anno la ricerca misura che cosa succede quando quello strato si gestisce in un modo o nell'altro. Alcuni effetti sono documentati bene, altri molto meno.When we talk about terroir we almost always talk about rock: limestone, clay, galestro. Above the rock, though, lies a thin living layer of roots, fungi, bacteria and decaying organic matter: that is where the vine eats and drinks. For some years now research has been measuring what happens when that layer is managed one way or another. Some effects are well documented, others far less so.

Below the surface, biomass generally equals or exceeds what we see above it.

La materia organica è la base di questa catena: è il cibo. Sempre il Centro europeo osserva che le pratiche agricole che riducono l'apporto o la persistenza della sostanza organica nel suolo tendono a ridurre anche la dimensione e la complessità delle comunità che ci vivono. L'humus, quindi, non agisce come un concime a effetto immediato: è la riserva da cui dipende tutto il resto.Organic matter is the base of that chain: it is the food. The same source notes that farming practices which reduce the input or the persistence of organic matter in the soil also tend to reduce the size and complexity of the communities living there. Humus, then, does not act like a quick-release fertiliser: it is the reserve everything else depends on.

L'erba fra i filari: cosa dà e cosa toglieGrass between the rows: what it gives and what it takes

L'inerbimento, spontaneo o seminato, è la pratica più discussa. Uno studio pubblicato su PLOS One ha seminato tredici specie diverse nell'interfila di un vigneto mediterraneo e ha misurato cinque funzioni insieme: riduzione del ruscellamento, stabilità del suolo, azoto minerale disponibile per la vite, acqua disponibile per la vite e biomassa prodotta. Il risultato non è un elenco di virtù ma un compromesso: comunità vegetali diverse danno livelli diversi di ciascuna funzione, e alcune si guadagnano a spese di altre, con la biomassa della copertura come uno dei motori principali delle funzioni legate al suolo.Cover cropping, whether sown or spontaneous, is the most debated practice. A study published in PLOS One sowed thirteen different species in the inter-rows of a Mediterranean vineyard and measured five functions at once: runoff reduction, soil stabilisation, mineral nitrogen available to the vine, water available to the vine and biomass produced. The result is not a list of virtues but a trade-off: different plant communities deliver different levels of each function, and some are gained at the expense of others, with the cover's biomass acting as a major driver of the soil-based functions.

In a deep, cool soil the grass keeps the vine's vigour in check; in a lean vineyard it can take away the water the vine needs, and then we are in the territory of water stress.

Le radici imparano a scendereRoots learn to go deeper

Sulle radici la misura è più precisa. In un vigneto mediterraneo di dieci anni, piantato a Montepulciano su portinnesto Kober 5BB, sono state scavate trincee per confrontare tre gestioni dell'interfila: lavorazione minima, inerbimento spontaneo e un miscuglio di graminacee seminato. Dove c'era la copertura erbacea le radici si sono sviluppate meno negli strati superficiali, per competizione con le erbe, ma hanno esplorato più in profondità e la lunghezza totale delle radici per pianta è aumentata. Più giù il limite non è l'erba: è il compattamento del terreno. La lavorazione, al contrario, ha favorito le radici medio-grandi e la biomassa radicale complessiva.On roots the measurements are more precise. In a ten-year-old Mediterranean vineyard, planted with Montepulciano grafted onto Kober 5BB rootstock, trenches were dug to compare three inter-row treatments: minimum tillage, spontaneous cover and a sown grass mixture. Where the herbaceous cover was present, roots developed less in the upper layers, through competition with the grasses, but explored deeper and total root length per plant increased. Further down, the limit is not the grass: it is soil compaction. Tillage, by contrast, favoured medium-to-large roots and total root biomass.

A fare il grosso dell'assorbimento di acqua e nutrienti sono le radici sottili, quelle che esplorano il volume di terreno maggiore. È su di loro che una scelta di gestione lascia il segno più lungo.Most of the water and nutrient uptake is done by the thin roots, the ones that explore the largest volume of soil. It is on them that a management choice leaves its longest mark.

Qui serve prudenza. L'effetto della gestione del suolo sul vino è quasi sempre indiretto: passa dal vigore della pianta e dall'acqua e dall'azoto che riceve, non da un sapore che sale dalla terra. Uno studio del 2025 pubblicato sulla rivista Microorganisms ha confrontato sei gestioni del sottofila in un vigneto di Cabernet Sauvignon della valle del Maipo, in Cile, seguendo poi le fermentazioni spontanee: con le leguminose, e in particolare col trifoglio rosso, il vino ha mostrato acidità totale e indice di polifenoli più alti e pH più basso.Here caution is needed. The effect of soil management on wine is almost always indirect: it works through the vigour of the plant and the water and nitrogen it receives, not through a flavour rising from the ground. A 2025 study in the journal Microorganisms compared six under-row management strategies in a Cabernet Sauvignon vineyard in Chile's Maipo Valley, then followed the spontaneous fermentations: with legume covers, and red clover in particular, the wine showed higher total acidity and polyphenol index and lower pH.

Nello stesso lavoro, però, le comunità microbiche sugli acini non differivano in modo significativo fra le gestioni. That is a useful antidote to the idea that soil transfers its microbes, and its taste, into the bottle: living soil changes the plant, and it is the plant that changes the wine. This holds whatever certification the label shows, because sustainable, organic and biodynamic describe a method, not a result in the glass.
