Sulla costa di Gipuzkoa, dove l'oceano tiene l'aria umida e cadono milleseicento millimetri di pioggia l'anno, nasce un bianco leggero e poco alcolico: il Txakoli. Le viti si allevano alte, su pergole di quasi due metri, e l'uva si vendemmia presto, con l'acidità ancora tesa. In bottiglia resta parte dell'anidride carbonica della fermentazione, ed è la punta di effervescenza che si vede appena versato. Profuma di mela verde, agrumi e fiori bianchi: è il vino dei pintxos di San Sebastián, da bere giovane e molto freddo.On the Gipuzkoa coast, where the ocean keeps the air damp and 1,600 millimetres of rain fall each year, comes a light, low-alcohol white: Txakoli. The vines are trained high, on pergolas nearly two metres up, and the grapes are picked early, while the acidity is still taut. Part of the carbon dioxide from fermentation stays in the bottle, and that is the touch of spritz you see the moment it is poured. It smells of green apple, citrus and white flowers: this is the wine of San Sebastián's pintxos, to drink young and very cold.

Getaria è un paese di pescatori sulla costa di Gipuzkoa, e il Txakoli si fa a ridosso dell'acqua. Il novanta per cento dei vigneti della denominazione sta in zona costiera, quasi tutti sotto i cento metri di quota, e il clima è atlantico e mite: tredici gradi di media annua, milleseicento millimetri di pioggia distribuiti su centosettanta giorni, milleottocento ore di sole. Le gelate primaverili, che altrove decidono l'annata, qui praticamente non esistono. Il suolo alterna strati duri di calcari e arenarie a strati teneri di marne e argille: è il flysch che si legge a occhio nudo sulle falesie basche, e che dà terreni franco-argillosi di pH neutro, ricchi di sostanza organica ma dilavati dalla pioggia.Getaria is a fishing town on the Gipuzkoa coast, and Txakoli is made right up against the water. Ninety per cent of the appellation's vineyards sit in the coastal belt, almost all of them below a hundred metres, and the climate is mild and Atlantic: an annual average of thirteen degrees, 1,600 millimetres of rain spread over a hundred and seventy days, eighteen hundred hours of sunshine. Spring frosts, which elsewhere decide the vintage, are practically unknown here. The soil alternates hard layers of limestone and sandstone with soft ones of marl and clay: this is the flysch you can read with the naked eye on the Basque cliffs, and it gives clay-loam soils of neutral pH, rich in organic matter but washed out by the rain.

The traditional training system is the parral, a pergola almost two metres high under which the bunches hang, aired and away from the moisture of the ground: two thirds of the surface is still trained this way, the rest on trellises. The main grape is Hondarrabi Zuri, white and highly vigorous, which calls for long pruning; beside it stands Hondarrabi Beltza, black-skinned, which makes the rosé and the small volume of red. The rules also allow a group of authorised grapes — Hondarrabi Zuri Zerratia, which is Petit Courbu, Izkiriota, which is Gros Manseng, plus Riesling and Chardonnay — but no more than twenty per cent of the vineyard surface processed by each registered winery. The harvest is largely done by hand, in crates of twenty kilos or so, and vineyard and cellar are close enough that the fruit reaches the press intact.

Il vino, qui, c'è da sempre. Il vigneto di Gipuzkoa compare già nel fuero concesso a San Sebastián da Sancho I di Navarra nel 1180; nel 1509 nasce a Donostia una confraternita di potatori, e nel 1520 una sentenza della Real Cancillería di Valladolid nomina «tre pipe e mezza di chacolí» e usa il termine «chacolín»: è su quell'atto che il pliego fa risalire al Cinquecento la prova del vino e del suo peso economico e sociale. Nell'Ottocento il vigneto della provincia si ritira quasi tutto sulla costa: restano trentacinque ettari a Getaria e quattro a Zarautz, con le vecchie pergole e le due uve autoctone. Nel Novecento la superficie continua a scendere, e solo dal 1980 il settore locale avvia il recupero. La Denominación de Origen arriva nel 1989 — prima delle tre del Txakoli, davanti a Bizkaiko nel 1994 e ad Arabako nel 2001 — e la prima vendemmia col sigillo è del 1990: allora restavano cinquantadue ettari fra Getaria, Zarautz e Aia.Wine, here, has always been made. Vineyards in Gipuzkoa already appear in the charter granted to San Sebastián by Sancho I of Navarre in 1180; in 1509 a brotherhood of vine-pruners was founded in Donostia, and in 1520 a ruling of the Royal Chancery of Valladolid names «three and a half pipes of chacolí» and uses the word «chacolín»: it is on that document that the pliego dates the proof of the wine, and of its economic and social weight, to the sixteenth century. In the nineteenth century the province's vineyard retreated almost entirely to the coast: thirty-five hectares were left in Getaria and four in Zarautz, with the old pergolas and the two native grapes. Through the twentieth century the surface kept shrinking, and only from 1980 did the local trade begin to bring it back. The Denominación de Origen came in 1989 — the first of the three Txakoli appellations, ahead of Bizkaiko in 1994 and Arabako in 2001 — and the first harvest with the seal was 1990: fifty-two hectares were left by then, between Getaria, Zarautz and Aia.

In 2007 the appellation was extended from those three municipalities to the whole Historical Territory of Gipuzkoa, and stood at three hundred and twenty-seven hectares and eighteen wineries; today it is thirty-six wineries and four hundred and forty-three hectares, forty-five per cent of them in the municipality of Getaria alone. Ninety per cent of what is bottled is white, ten per cent rosé, the red barely anything. And the wine once drunk within a few kilometres now sends a fifth of its output abroad, with the United States as its first market. The measure, though, has stayed the same: a wine to drink young, opened cold within a year or two of the harvest.

It is the same logic behind the right wine for oysters and raw seafood, where acidity and salinity count for more than body, and the one that ties the wine to coastal terroir.

Open it very cold over a counter of pintxos or a plate of seafood, on the evenings when the wine should accompany rather than take the stage.
