Al colore è giallo paglierino con riflessi verdolini, limpido e brillante. Al naso è abbastanza intenso e fine: fiore di tiglio, mela verde, limone candito, pesca bianca, e una nota minerale di ardesia che ne percorre il fondo, elegante e inconfondibile. In bocca è leggero di corpo e molto fresco, con un'acidità che fa da spina dorsale; nel Kabinett la dolcezza residua è integrata senza risultare stucchevole, il finale è abbastanza persistente, sapido e pulito. Con gli anni guadagna note di idrocarburo, miele e frutta secca, mantenendo la tensione.In colour it is straw yellow with green highlights, clear and brilliant. On the nose it is fairly intense and fine: lime blossom, green apple, candied lemon, white peach, and a slate minerality running through the base — elegant and unmistakable. On the palate it is light-bodied and very fresh, with an acidity that acts as its backbone; in the Kabinett the residual sweetness is integrated and never cloying, the finish fairly persistent, savoury and clean. With time it gains notes of petrol, honey and dried fruit, keeping its tension.

Il Prädikatswein è la piramide qualitativa tedesca, e il Kabinett ne è il livello più leggero: il nome rimanda al «Cabinet», la cella riservata dove un tempo si custodivano i vini migliori, un uso documentato dal Settecento. Prädikatswein is the German quality pyramid, and Kabinett is its lightest level: the name harks back to the «Cabinet», the reserved cellar where the finest wines were once kept, a usage documented from the eighteenth century. The human hand here is all about balance: strictly hand-harvested, respect for the must, no artificial enrichment allowed under the Weingesetz.
