Kallstadt sta proprio qui, all'estremità nord di questa zona d'oro.The Palatinate — Pfalz in German — is Germany's second-largest wine region by area, a long band of hills running south along the German Wine Route, the Deutsche Weinstraße. To the west it is sheltered by the Haardt mountains, a barrier that keeps the colder, wetter Atlantic weather at bay: the result is a warm, relatively dry climate with long seasons, where figs, almonds and chestnuts ripen. It is no surprise that some call it «Germany's Tuscany». Its noble heart is the Mittelhaardt, the central-northern strip where Riesling finds some of its finest soils. Kallstadt sits right here, at the northern edge of this golden band.

Le origini di Koehler-Ruprecht risalgono intorno al 1700, e il nome unisce due rami familiari, i Koehler e i Ruprecht. But its modern identity bears above all the signature of one man: Bernd Philippi, who took over the estate in 1986. While many rushed towards controlled fermentations, steel and instant aromatics, Philippi did the opposite. Spontaneous fermentations with the house's own yeasts; long ageing in large used wooden casks; and then waiting, a great deal of waiting, with the best bottles released very late. It was a contrarian bet on slowness. In 2009 Philippi sold the estate to an American family and stayed on as a consultant; he died in 2023. Today the winery — a little over a dozen hectares — is run by Dominik Sona, who guards its style without betraying it.

Il vigneto-simbolo di Kallstadt si chiama Saumagen, e il nome fa sorridere: in tedesco significa «stomaco di scrofa», che è anche il nome del piatto tradizionale del Palatinato. La forma del cru ricorda davvero una conca, un anfiteatro naturale: in epoca romana qui si scavava la pietra, e quella vecchia cava di calcare è diventata col tempo una delle parcelle più ambite della regione. Il terreno è ricco di calcare, con marne e loess e una pioggia di piccoli frammenti di pietra; l'esposizione guarda a sud-est. The shape of the cru really does recall a hollow, a natural amphitheatre: in Roman times stone was quarried here, and that old limestone quarry became, over time, one of the region's most coveted parcels. The soil is rich in limestone, with marl and loess and a scattering of small stone fragments; the exposure faces south-east. The pale stones hold and reflect heat, the site stays dry and well aired right up to harvest — ideal conditions for a dry Riesling. What we perceive in the glass as tension and finesse is not the taste of the rock passing into the wine, but the fruit of a growing environment: poor, free-draining soil, wide swings in temperature, healthy grapes picked at the right moment.

Dal Saumagen nascono i vini più celebri della casa, le riserve siglate «R» (e ai vertici «RR»): Riesling secchi, talvolta etichettati ancora con le vecchie categorie di maturazione come Spätlese e Auslese ma vinificati in versione secca, pensati per durare. Il colore va dal giallo paglierino al dorato con gli anni. Il naso è fine e complesso: agrumi, pesca, erbe aromatiche e, con il tempo, quella nota di idrocarburo — il classico sentore «petrol» — che è una firma stilistica del Riesling maturo, non un difetto. The colour moves from straw yellow to gold with the years. The nose is fine and complex: citrus, peach, aromatic herbs and, in time, that note of hydrocarbon — the classic «petrol» hint — which is a stylistic signature of mature Riesling, not a flaw. On the palate they are dry, with a taut, knife-edge acidity for a backbone, savoury and long on the finish. These are wines that ask for patience and repay it: ten or twenty years on, they show why this corner of the Palatinate has always been a land of great Riesling.

It pairs with freshwater fish, a butter-cooked trout or the classic river preparations, and goes well with roast pork and good butcher's sausages. With the spiced flavours of Asian cooking — a gentle curry, sweet-and-sour dishes — its acidity and savouriness hold their own without smothering. And an aged cheese is no problem for it.
