Un vino appena finita la fermentazione è torbido. In sospensione restano lieviti esausti, frammenti di buccia, proteine che col tempo potrebbero intorbidare la bottiglia. Una parte di questo deposito scende da sola: basta lasciare il vino fermo al freddo e travasarlo un paio di volte.A wine that has just finished fermenting is cloudy. Spent yeasts, skin fragments and proteins that could later turn the bottle hazy are still in suspension. Part of that deposit settles by itself: leave the wine still and cold, rack it a couple of times and it goes down.
Per fare più in fretta, e per mettersi al riparo da sorprese future, molte cantine aggiungono un chiarificante: una sostanza che si lega alle particelle in sospensione e le trascina sul fondo, dove diventano un deposito compatto da separare. Serve anche ad altro: sui rossi ammorbidisce i tannini più duri, sui bianchi toglie note ossidate o amare.To speed things up, and to guard against later surprises, many cellars add a fining agent: a substance that binds to the suspended particles and drags them to the bottom, where they form a compact deposit that can be separated. It does other jobs too: on reds it softens the harshest tannins, on whites it removes oxidised or bitter notes.
