L'Erbaluce cresce da secoli sull'anfiteatro morenico di Ivrea, la grande conca di colline lasciata dai ghiacciai nel Canavese: suoli sciolti, sassosi, ben drenati, vigneti tra i 200 e i 500 metri. È un vitigno di casa qui, tradizionalmente allevato sulla pergola canavesana, che tiene i grappoli alti e ariosi. La sua firma è l'acidità: naturalmente spiccata, tiene il vino fresco e diritto. Proprio quella spina dorsale acida lo rende raro tra i bianchi, capace di tre vite diverse. Da vino fermo è secco e agrumato; con la rifermentazione in bottiglia diventa uno spumante metodo classico dal perlage fine; con le uve fatte appassire dà il Caluso Passito, dolce e dorato, storicamente il vino delle feste del Canavese. Riconosciuta DOC nel 1967, la denominazione è salita a DOCG nel 2010.Erbaluce has grown for centuries on the morainic amphitheatre of Ivrea, the great bowl of hills left by the glaciers in the Canavese: loose, stony, well-drained soils, vineyards between 200 and 500 metres. It is a variety at home here, traditionally trained on the Canavese pergola, which keeps the bunches high and airy. Its signature is acidity: naturally sharp, it keeps the wine fresh and upright. That very acidic backbone makes it rare among whites, able to live three different lives. As a still wine it is dry and citrusy; with a second fermentation in the bottle it becomes a classic-method sparkling wine with a fine perlage; from dried grapes it gives Caluso Passito, sweet and golden, historically the festive wine of the Canavese. Recognised as DOC in 1967, the appellation rose to DOCG in 2010.
