Il Barolo si fa su un fazzoletto di colline a sud di Alba: undici comuni in provincia di Cuneo, di cui solo tre — Barolo, Castiglione Falletto e Serralunga d’Alba — interamente compresi nella denominazione. Qui le marne calcareo-argillose di origine marina si alternano a strati compatti di arenaria e a coperture di sabbie quarzose. Quelle colline si dividono grosso modo in due famiglie di suoli: attorno a La Morra e al paese di Barolo le marne sono più chiare e fini, e danno vini di profumo più immediato; verso Serralunga d’Alba, Monforte e Castiglione Falletto i terreni sono più compatti e ferrosi, e i vini escono più severi e lenti. È la ragione per cui due Barolo della stessa annata possono avere caratteri molto diversi, ed è anche il motivo per cui la denominazione ha messo in etichetta centottanta menzioni geografiche aggiuntive: centosessantanove cru, da Cannubi a Brunate a Sarmassa, e una per ciascuno degli undici comuni.Barolo is made on a small pocket of hills south of Alba: eleven municipalities in the province of Cuneo, of which only three — Barolo, Castiglione Falletto and Serralunga d’Alba — lie entirely within the appellation. Here marine calcareous-clay marls alternate with compact sandstone layers and a cover of quartz sands. Those hills fall roughly into two soil families: around La Morra and the village of Barolo the marls are paler and finer, and give wines of more immediate perfume; towards Serralunga d’Alba, Monforte and Castiglione Falletto the soils are more compact and iron-rich, and the wines come out sterner and slower. That is why two Barolos of the same vintage can have very different characters, and also why the appellation has put a hundred and eighty additional geographic mentions on its labels: a hundred and sixty-nine crus, from Cannubi to Brunate to Sarmassa, and one for each of the eleven municipalities.
Il Nebbiolo, dal canto suo, non aiuta chi ha fretta. Germoglia presto e matura tardi, quando sulle Langhe è già scesa la nebbia autunnale da cui prende il nome, e per arrivare in fondo pretende le esposizioni migliori. Ha buccia sottile e poco colore — da qui il granato scarico che sorprende chi si aspetta un rosso impenetrabile — ma tannino e acidità in abbondanza: sono queste due durezze a dargli struttura e a tenerlo in piedi per decenni.Nebbiolo, for its part, is no help to anyone in a hurry. It buds early and ripens late, when the autumn fog — nebbia, which gives it its name — has already settled over the Langhe, and it demands the best exposures to ripen fully. It has thin skins and little colour — hence the pale garnet that surprises anyone expecting an impenetrable red — but plenty of tannin and acidity: it is those two hard components that give it structure and keep it going for decades.

Il disciplinare impone almeno trentotto mesi di affinamento, diciotto dei quali in legno, che diventano sessantadue per la Riserva: un Barolo arriva sullo scaffale quando molti altri rossi sono già stati bevuti. Negli anni Novanta la denominazione si è divisa fra chi accorciava le macerazioni puntando su legni piccoli e chi restava fedele alla botte grande; oggi le due scuole si sono avvicinate e la differenza si gioca più in vigna che in cantina. Marchesi di Barolo, nel paese che dà il nome al vino, sta dalla parte classica: fermentazione in acciaio, una quindicina di giorni sulle bucce e circa due anni di rovere di Slavonia, prima in botti da trenta e sessanta ettolitri e poi nelle grandi botti tradizionali.The rest is done by time. The production code requires at least thirty-eight months of ageing, eighteen of them in wood, rising to sixty-two for the Riserva: a Barolo reaches the shelf when many other reds have already been drunk. In the Nineties the appellation split between those who shortened macerations and turned to smaller barrels and those who stayed loyal to the large cask; today the two schools have moved closer and the difference is played out in the vineyard more than in the cellar. Marchesi di Barolo, in the village that gives the wine its name, stands on the classic side: fermentation in steel, about a fortnight on the skins and some two years of Slavonian oak, first in casks of thirty and sixty hectolitres and then in the large traditional ones.
