Kalecik è un paese con un castello, a sessantacinque chilometri a nord-est di Ankara. Lì vicino scorre il Kizilirmak, il fiume che addolcisce gli inverni dell'altopiano, e nella sua valle cresce un'uva nera che porta il nome del posto: Kalecik Karasi, «il nero del piccolo castello». The Kizilirmak river runs nearby, softening the winters of the plateau, and in its valley grows a black grape that carries the name of the place: Kalecik Karasi, 'the black one from the small castle'. By the end of the 1960s it had all but disappeared, and what put it back into circulation, the winery recounts, was the clonal selection work of Y. Sabit Agaoglu, a viticulture professor at Ankara University. In 2002 Agaoglu himself, together with his wife Gulcihan, planted one hectare of vines in that valley and named it after their daughter: Tomurcukbag.

Le uve di Narince, il bianco che qui si vinifica accanto al rosso, non nascono in casa: arrivano dalla zona in cui quel vitigno cresce da sempre.The vineyard really is small: ten donum, that is one hectare, planted entirely to Kalecik Karasi. The cellar sits inside the vineyard and holds twenty-three thousand litres; those are the figures the estate itself uses when it calls itself one of the smallest boutique operations in Turkey. The Narince grapes — the white it vinifies alongside the red — are not grown at home: they come from the area where that variety has always grown.

The river makes the difference: at Kalecik it creates a milder microclimate in the cold season. The soils are clay and silt, full of pebbles, and the grapes ripen in the second half of September.

Back in Turkey he starts, with colleagues at Ankara University's Faculty of Agriculture where he would teach for forty-five years, a clonal selection programme that begins again from a handful of cuttings. The winery puts that near-disappearance down to phylloxera, in the late 1960s.

Kavaklidere, the historic Ankara house, writes that in 1992 it launched a contract-grower scheme precisely in order to propagate Kalecik Karasi again: it started in the village of Uyurca with three growers and one hectare each, and today — again according to the company — the area under Kalecik Karasi around Kalecik has reached four hundred hectares.

È il modo di lavorare che l'azienda dichiara per tutta la sua produzione — fermentazioni spontanee, pochi interventi — e che dal Kalecik Karasi si è esteso al Narince.From the 2009 harvest comes the wine the house calls Trajan Reserve: made without a press and fermented with the grape's own yeasts. It is the way of working the estate declares for its whole production — spontaneous fermentations, little intervention — and it has spread from Kalecik Karasi to Narince.
C'è anche una tavola, dentro la vigna, dove si entra su prenotazione: la cucina lavora su ingredienti locali e stagionali, secondo l'idea che quello che cresce insieme sta bene insieme. Pasaeli, which makes wine at Kemalpasa near Izmir, has replanted Cakal in its own vineyard, a pink-skinned variety that came within a step of disappearing because it is only good for rosé.

Il Kalecik Karasi dà rossi di corpo medio, poco tannici, con un'acidità viva e profumi di frutti rossi: ciliegia, fragola, lampone. È un vino da servire fresco, intorno ai 14-16 gradi, e da mettere accanto a piatti che non chiedono peso.Kalecik Karasi gives medium-bodied reds, low in tannin, with lively acidity and red-fruit aromas: cherry, strawberry, raspberry. Serve it cool, around 14-16 degrees, alongside dishes that do not ask for weight.
Con le costolette d'agnello alla griglia funziona bene perché il vino, poco tannico, non copre la carne e la freschezza tiene la bocca pulita fra un boccone e l'altro. Con una pasta al pomodoro o uno spezzatino in umido è l'acidità del vino a stare al passo col pomodoro. E davanti a melanzane e peperoni arrostiti serviti con lo yogurt, piatto delicato dell'Anatolia, un rosso poco tannico come questo resta della misura giusta.With grilled lamb cutlets it works because the wine, low in tannin, does not cover the meat and its freshness keeps the mouth clean between bites. With pasta in tomato sauce or a slow-cooked stew it is the wine's acidity that keeps pace with the tomato. And in front of roasted aubergines and peppers served with yoghurt, a delicate Anatolian dish, a red as low in tannin as this one stays in proportion.
