Still, it is Georgia — and Kakheti above all — that gives its most recognisable expression.

Il Saperavi secco è un vino da tavola nato per i piatti ricchi: il tannino saldo e l'acidità viva tengono testa al grasso e alla brace. Si sposa bene con le carni alla griglia — gli spiedini georgiani di maiale o manzo (mtsvadi) — e con i ravioli di carne speziati (khinkali). Accompagna brasati, agnello e formaggi stagionati, e regge bene anche le salse alle noci della cucina caucasica. Le versioni amabili, come il Kindzmarauli, stanno bene su dolci di frutta e cioccolato non troppo dolce.Dry Saperavi is a food wine made for rich dishes: its firm tannin and lively acidity stand up to fat and char. It pairs well with grilled meats — Georgian pork or beef skewers (mtsvadi) — and with spiced meat dumplings (khinkali). It accompanies braised dishes, lamb and aged cheeses, and copes well with the walnut sauces of Caucasian cooking. The semi-sweet versions, such as Kindzmarauli, sit well with fruit desserts and not-too-sweet chocolate.

It is a teinturier grape, with coloured flesh — hence its name, which in Georgian means precisely «colour».
