From Georgia, one of the historic cradles of wine, comes a very old white grape: Rkatsiteli, literally «red stem» for the coppery colour of its canes at ripeness. It is the country's most planted variety and the heart of Kakheti's whites, with two souls: fresh and citrusy in steel, amber and tannic when it ferments on the skins in the buried qvevri.
Il carattereThe character
Dove cresceWhere it grows
Its homeland is Kakheti, in eastern Georgia: the Alazani river valley at the foot of the Caucasus, with alluvial and limestone soils and wide day-to-night temperature swings that preserve acidity. Beyond the Caucasus, Rkatsiteli is grown in Russia, Ukraine, Moldova, Bulgaria and Armenia — a legacy of the Soviet era, when it was the high-volume white — and today small plantings are also found in the United States (Finger Lakes, Virginia) and in China, where it is called Baiyu.
This is where Rkatsiteli shines. In the traditional Kakhetian method it ferments and ages in the qvevri — the large buried clay amphora — in long contact with skins and stems: the result is amber wine, tannic in structure and oxidative in aroma, tied to a tradition recognised by UNESCO as heritage of humanity (2013). The same grape, vinified in steel on the cooler hills, signs the dry, citrusy whites in the Tsinandali style.

A tavolaAt the table
Rkatsiteli's two souls call for different tables. The dry white, fresh and savoury, accompanies lake fish, chicken and vegetables, and pairs with khachapuri, the Georgian cheese bread. The amber qvevri version, with its tannin, stands up to bolder dishes: grilled meats, aged cheeses, aubergine and the walnut sauces of Caucasian cuisine.

In the Soviet Union, Rkatsiteli became the high-volume white par excellence: one of the most planted white grapes in the world. The anti-alcohol campaign launched by Gorbachev in 1985 led to the uprooting of vast areas of vineyard across the USSR, and its rows too were cut back. Yet it remains one of the oldest grapes still in cultivation, tied to qvevri winemaking, whose roots reach back millennia.
